Hello Chef. Here in Maryland I am able to shop at a Indian grocery story. My significant other who was Indian was from India died 5 months ago so I was able to ask him question. So I would like to try this. What are some other names for sorghum and pigeon peas. I have Moong dal and I love hing. I do not like peas so I think I will substitute emanate. So that I can look for proper name in store because in American store we do not see the name pigeon peas . I would like the asian name . In the Indian shop there are many many deals. It would be interesting to know how each dal is perfect for certain meal. Thank you for your recipes.
