Turkey brine
1/2 cup kosher salt
3/4 cup brown sugar
2 bay leaves
1 tbsp Chicago Steak Seasoning
1 tsp accent aka msg
water
Yams
3 lbs sweet potato
1 stick salted butter
1/2 cup brown sugar
2 tbsp maple syrup
1 tsp vanilla extract
1/2 tsp lemon extract
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
Cabbage
1 cabbage
3 slices bacon
1 sazon ham packet
salt/pepper to taste
Rice & Pigeon peas
2 cups long grain rice
1/2 lb hot sausage
3 slices bacon
1 stalk celery
1/2 onion
1/2 bell pepper
1 ham sazon packet
1/2 tbsp chicken and tomato boullion
1/2 tbsp beef boullion
1/2 tbsp sazon tropical
3 cup water (including pigeon pea liquid)
* season the broth to taste. It should taste very seasoned. adjust the boullion amounts to your taste. Only chicken and beef or just beef can be used if thats all you have.
