After you mix the dough, leave it for an hour or 2, then wet your hands and work surface, should work just fine

I’ve just tried the slap and scrape method. Just scraping the remnants off of the ceiling, light fitting, floor, dog etc etc. should have ex enough left to make a small bun.

How many sets of coil folds do you usually do? Do you do more sets than you would with stretch and folds since they’re more gentle?

Hope you found an answer within the last month but in case you haven’t lol. In my experience, 3 sets of coil folds seems like plenty. While it can be more gentle, it is incredibly efficient at capturing those gas bubbles while still developing a great internal structure. Could be two sets, could be 4. “Sometimes he maybe good, sometimes maybe shit…” 😊

The number of folds depends on how many the dough requires. A more hydrated dough will need more, to build enough tension, while a stiffer dough will require less. Both techniques are similar, so the number would not change if I were to use one vs the other. But i would start with stretch & folds and finish with coil folds, as they are indeed more gentle. in my experience a sticky dough would stick to anything regardless of the material it's made of. I find it quite easy working with ceramic bowls.

It depends on a lot of factors, mainly the flour you use, the amount of water. But also starter, how you mix it, etc
