In this video, I decided to take the risk and make yeast-free sourdough focaccia right in front of your eyes without a plan or recipe.
With this video, I want to show that it is not necessary to strictly adhere to recipes and weight of ingredients. It is much more important to understand and feel what you want to get out of the test. Understand its texture and fermentation behavior.
Focaccia made with sourdough is tender and airy, with a lot of large pores. This is a great snack bread for meat, grilled vegetables, fresh salads. Surprisingly, as a standalone snack with olive oil, focaccia is also exceptional!
Sourdough focaccia can be made with various additives: olives, tomatoes, olive oil, oregano, rosemary, dried herbs. The main thing is not to overdo it with the filling and not turn the focaccia into pizza.

So, we need:
Sourdough 100% moisture 100 grams
250 ml. cold water
300 gr of premium flour (I use Belonezhnaya)
+15 g of water
+10 g water
5-7 grams of salt.
Water, flour and salt - this is what delicious Italian sourdough focaccia is made of!
