90g natural yeast (Hydration 100% ie 1:1:1 ratio.)
55g warm water at 35 degrees Celsius (helps yeast bloom)
110g high protein flour. P uses 12.5% Protein powder (in Germany No. 550, VN No. 13)
15g honey or granulated sugar
Maindough:
Yudane: 20g bread flour+ 30g hot water. Let it in Frige at least 4h (in video I used 50g hot water, it was my mistake)
90g cold milk (can combine milk and whipping cream)
25g beaten egg (1/2 egg, half left to spread the cake)
185g high protein flour (if using 5g milk powder, reduce the amount of flour to 180g)
35g-40g sugar
5g salt
35g unsalted butter, cold
