I know, right? I don't even have a Sous Vide machine. I use a pot in which I replace the enough of the warm water with hot water once every half an hour for a few hours, or bring it to simmer before taking it off the heat. Not the same, slightly overcooked at times, but still works wonders. And for sealing, I use those normal resealable plastic bags in the same pot of water.

Make the series like some sort of tournament, with first iteration being of the plain recipes, and then further iterations including increasingly more difficult or complicated recipes. Like, if you check sourcream vs plain vs lard, the second iteration would be sourcream + lard vs the previous winner vs something else.

What makes this channel the best is that Guga is a steak cooking master, and they have a good set of tasters that don’t take things seriously. The whole paper plates, plastic cutlery, and number c system is what got me hooked.

Made Sous Vide steaks yesterday for my and my GF, one ribeye, one filet. She fell in love with sous vide! 2 hours at 130 then finished up on the grill. Smoked sea salt, pepper, garlic powder, onion powder. Thank you guys!

@make-me Actually the letters A, B, C, D, E, and F are also numbers when counting in the hexadecimal system because they allow each number to use only 1 byte of data for storage and transmission. A=10, B=11, C=12, D=13, E=14, and F=15 this should be common knowledge to anyone who uses computers in a professional capacity.

I just tried out a slightly modified version of rub C. I did this with steaks cut from… wait for it… eye of round! Eye. Of. Frickin. Round. And it was outstanding! I trimmed the silverskin and excess fat, then cut the roast into 8 steaks (cutting with the grain), roughly 1.5" thick each. I then took a fork and proceeded to do my best Psycho impression to each steak, stabbing vigorously to tenderize (note: this is very cathartic). I then gave the steaks a salt and black pepper seasoning, followed by coating both sides with rub C. After a vacuum seal, four of the eight steaks went into the sous vide at 131°F for seven hours (the other four were seasoned, rub-coated, vacuum sealed, and went into the fridge). After the seven hour cook (it was only supposed to be a three-hour cook, but something came up and I extended the time), I took the steaks out, patted them dry, torch-seared them, sliced and served. The meat was tender and delicious, with a slight tartness that blossomed as I chewed. I consider this experiment a great success, especially because it was done with such a cheap cut of meat. Thanks for the inspiration and information, Guga!

Believe it or not, am going to try the rub C, marinate on a ribeye, and cook in my fairly new Air Fryer tonight for my hubby on his birthday today. However, not for 2 1/2 hours LOL. Could you try making "rabada" and "cupim" sous vide? Those are some of the odd Brazilian cuts I like the most. Also, you should do a World Cup special, with dishes from the nations that played. If it's too much work, do a dish from the country that wins, or better yet do a dish for each of the two finalists and compare them to see which one you like more. How do you make Cuban coffee? In the Sous vide coffee video you called it Cuban Coffee but used Italian espresso. Is that the same coffee that was used in this video? I've also heard of Turkish coffee which I understand to be very similar.

+Trarco, You are right in your concern. The sugars,esters, resins, oils from the rub components bind to the product during the marinating phase. Cooking it at high temps with the rub will burn the components of the rub, turning the bitter, acrid. Not flavors you want on your food. It's fine to leave the rub on the product when smoking, as this is done at temps around 250F and becomes part of the delicious, crusty bark.

Have you tried pre sear vs no pre sear? Searing the meat before sous vide and searing again afterwards for a nicer crust? I don't know if it makes much of a difference since people claim pre searing applies the Maillard effect during the sous vide making food more flavorful

The hexadacimal number "C" in decimal ("regular" numbers), would be 12 :) So you're basically counting from 10 (which is A)

Hi Guga! I just got started but I am having trouble searing the steak with the searzall, after the sear the steak loses it's pink and turns grey. Is it the thickness, or the fact that I need to pat them down more thoroughly or cool them down? Thanks!

Will definitely try this. Suggestion on testing methodology. Compare A v B, pick a winner, then eat the winner again and compare winner v C. By this I mean cut piece A in two, eat one piece, then compare against a cut in half B. Winner is again eaten then directly compared against C. Thanks for sharing.

I use a coffee rub by Weber, and it's really good on beef. But put it on pork, like pork chops, and just bursts with flavor.

0x0C ("Number C" as you say) is 12 in decimal, 14 (or 0o14) in Octal, and 1100 (or 0b1100) in binary. Bonus fact: 0x0C is also known as the "Form Feed" in ASCII and causes most printers to eject the current sheet and go to the next page.
