Spaghetti Bologanese
*Serves 2 *
Ingredients:
Spaghetti - 200 gm
(Boiled & strained but save the pasta water)
Butter - 3 tbsp
Olive oil - 1 tbsp
Mutton Mince - 350 gm
Garlic cloves - 5-6
Onions - 1 cup (chopped)
Carrots - 1 big (cubed)
Celery- 1 (finely chopped)
Salt and Pepper - to taste
Peeled tomatoes- 400 gm
Oregano - 1 tbsp
Mixed Herbs - 1 tbsp
Chilli flakes - 1 tbsp
Grated Cheese - ¼ cup
Basil - garnish
Parsley - garnish (freshly chopped)
Method
1. Boil spaghetti in lots of water which has lots of salt, until al dente (firm to the bite) and set aside. Sprinkle a generous amount of oil on the noodles to prevent them from sticking. Save the pasta water.
2. In a pan, heat butter and olive oil until brown.
3. Add the minced mutton. Once the mutton is brown, move it to the side, add some more oil. 4. To the hot oil, add crushed garlic, onions, carrots and celery, salt, pepper to taste and cover until cooked.
5. Now add the canned tomatoes, smash them carefully to create a thick sauce then add some oregano, mixed herbs, chilli flakes to make it more flavourful.
6. Now the boiled spaghetti and toss carefully and add some of the pasta water to adjust the consistency.
8. Then add grated cheese, throw in some fresh basil leaves, give it a final toss and serve hot garnished with freshly chopped parsley.
