Today I decided to take you to the place of origin of gladiators and emperors: Rome! And which dish best represents it, if not a simple but powerful carbonara pasta dish? As you know it's not easy to satisfy my stomach, so I ventured into this new recipe MOCHO style for sure!
INGREDIENTS:
- Eggs 6
- Pillow 400 g
- Pecorino 300 g
- Spaghettoni 500 g
- Pepper as needed
- Salt to taste
- Buratta 200 g
- Mortadella 150 g
- Roman pizza 1 large slice
RECIPE:
Cut the cheek into small pieces and put in the pot to make sweat, until it becomes crispy. Whip the egg yolks with the pecorino, until you get a creamy sauce. Stretch with the fat of the pillow and give another pass with the electric whisk. Pepper the cream. Boil the water and toss the pasta when it boils. Remove the guanciale from the pot and finish cooking the pasta in the pan with the fat from the bacon and a little cooking water. Turn off the heat and add the cream off the stove. Stir and add the pillow. Take a Roman pizza and cut it in 2: butter the 2 halves and brown them in a pan, fill them with burrata, mortadella and spaghetti alla carbonara. Finally, sprinkle with pecorino.
