Spatchcock Chicken
- 5 1/2 lb roaster chicken spatchcocked, squirted with liquid butter
and seasoned with McCormick Montreal Chicken and Caribbean
Jerk seasoning.
- cooked w/Kingsford Original, direct and indirect on the PK
Grill/Roaster.
- grill direct over hot coals for 5 mins, then roast indirect for remainder
of cook.
- roast at 350 deg F until the breast reaches an internal temp of 165-
170 deg F.
- cook time around 1-1 1/4 hrs total.
- remove from cooker and let rest 15-20 mins.
- cut up into pieces, slice the breast meat and serve.
