Remove innards from the chicken and rinse with water. Remove backbone using a food shears and flatten the chicken. Rib oil on the skin and season both sides of the chicken well with yoir favorite chicken rub. Preheat smoker to 275 degrees and place chicken on smoker, breast side up. Smoke chicken until thick part of the thigh and breast reaches 165 degrees. Remove chicken and let rest for 10 - 15 minutes before slicing.
