Welcome back to my Channel! The Christmas holiday season is upon us and I have a delicious dessert recipe for you today! It’s called Gevulde Speculaas, it’s a well known pastry in the Netherlands, especially during the holiday seasons. It’s an Almond paste filled spice cake/ pastry.
It’s a really delicious dessert made out of a speculaas/ spiced dough filled with amandelspijs (almond paste) you can compare the amandelspijs to marzipan. I will also teach you how to make your own almond paste, but of course you can also buy it at your local supermarket.
This recipe needs at least 2 days to make if you make your own almond paste. The dough/ crust needs to be rested for at least 1 hour but preferably overnight in the fridge.
**The stuffing amandelspijs (almond paste) needs at least 1 day to let the lemon/lime zest infuse inside the mixture. It will taste even better if you leave it for 2 - 4 weeks in the fridge for the flavor to really get into it.
⚠ If you do want to leave the amandelspijs for more than 1 day in the fridge do that before adding the egg! ONLY add the egg to the amandelspijs on the day you use it!) ⚠
For this you don’t need to have a baking mold. I will show you in the video how to assemble it with and without a mold.
