Spelt? You must be kidding me. Where did this so called expert come from? Spelt isn't gluten free and neither are the foods labelled gluten free if they only adhere to the 20 ppm ruleif they contain wheat, barley or rye, and oh yes, spelt. Come to New Zealand, 5 ppm is the mandatory standard, I bet all the coeliacs (yes, we spell it with an "o' because we can) are healthier here, and need less toilet paper.
