Red pepper adds a new dimension to the popular hummus
SPICED RED PEPPER HUMMUS
Ingredients
1 cup boiled chickpeas (kabuli chane), peeled
1 medium red pepper (capsicum)
2 pita breads
2 tsps chopped garlic
2 tsps sesame paste (tahini)
Salt to taste
½ tsp red chilli powder + a little to sprinkle
8 tbsps extra virgin olive oil
1 lemon
Method
1. Roast red pepper on direct flame till the skin gets charred.
2. Cut pita breads into small even triangles and toast them on a hot non-stick pan.
3. Put the chickpeas into a chopper jar. Peel and chop the red pepper roughly and put into the jar.
4. Add garlic, sesame paste, salt, red chilli powder and 4 tbsps extra virgin olive oil and process till smooth.
5. Squeeze juice of the lemon and add and process some more.
6. Transfer the hummus into a bowl. Drizzle remaining extra virgin olive oil and sprinkle some red chilli powder.
7. Serve with pita crisps.
