Oh my I love carrots, ya got me inspired here my version was delish I made a dressing by combining 1 cup water with 1/4 cup of molasses and heating it with 1/4 cup of soya sauce some garlic and ginger paste and corn starch to thicken it up a bit used about 2oz. to mix in each salad I made using a combo of a handful of arugula and a handful of the carrots tossed it up and garnished with crushed walnuts and a sprinkle of sunflower seeds served it with rice and pork chops and everyone enjoyed !

I just made this since I had a lot of carrots to eat up and it's delicious! I used tahini instead of olive oil in the dressing (I don't use oil) and it turned out great! I don't see the written recipe so I guessed on the measurements. I think I went a little heavy on the balsamic but it's still good. Thank you!

This was a huge success for me. I used to just grate a few carrots, add a splash of orange juice and that was it! What a difference your recipe made in my life. Thank you for sharing.
