Ingredients:
6 kg beef (boti pieces)
1/4 cup lemon juice
2 tbsp ground red chili
2 tbsp paprika powder
3 tbsp cumin powder
1 tbsp chat masala
3 tbsp ground coriander
1/2 tbsp carom seeds (ajwain)
2 heaped tbsp salt
3 tbsp soy sauce
Fat (for layering)
200-300 grams bones (optional)
2 medium-sized onions
2 tomatoes
Ginger and garlic paste
Green chilies (slit)
Potatoes (thinly sliced)
Method:
Prepare the masala by combining lemon juice, red chili, paprika, cumin, chat masala, ground coriander, carom seeds, and salt. Mix well and add soy sauce.
Apply the masala thoroughly to the beef pieces.
Layer the bottom of the pot with fat and place the bones (if using) on top.
Add onions, tomatoes, ginger, garlic paste, and green chilies to the pot.
Create a thin layer of sliced potatoes around the sides of the pot to seal it.
Cover the pot tightly with a lid and press it down firmly.
Cook on medium-low heat for about 4 hours.
Check for doneness and enjoy the juicy and flavorful Spicy Dum Pukht made with beef.
