Join me in the kitchen as I prepare a quick "cleaning out the fridge" Bhagi Rice with Chicken and Salted Pigtails!
Ingredients:
3 lbs of chicken + 1 lb of salted pigtails
3 cups of parboiled rice
1 bundle of chorai bhagi (Jamaican callaloo/amaranth leaves)
1/2 cup of green seasoning
2 cups of coconut milk + 2 tbsps coconut cream
6-8 ochroes/okra
1/4 cup of chopped pumpkin
1 carrot
2 corn, sliced
1/2 cup of green seasoning
5 baby bell peppers/sweet peppers
3-5 pimento peppers (seasoning peppers)
3-5 thyme sprigs
1 onion
10-12 cloves of garlic
1/4 cup of chopped celery
2 tbsps of each: chopped scallion (chive) + bandhania/culantro/shadon beni/recao/ngo gai/sawtooth coriander + cilantro + parsley
2 tablespoons of brown sugar
1 tbsp avocado oil
Salt + Black pepper (as needed)
*optional- finish with salted margarine or a healthier alternative of butter combined with annatto or roucou.
