Let's go green this time! Spinach and cilantro rice is not only delicious and nutritious but also a simple lunch box recipe. Sometimes, we wonder what can be done with leftover rice. Here is the answer.

Queen of Spices - Episode 3
Ingredients:
Spinach - 6 oz(170g)
Carrot - 1
Onion - 1/2 of a medium/large one
Cilantro/Coriander - 1 cup loosely packed
Ginger - 1 inch piece
Garlic - 2 cloves
Serrano peppers - 2 (Can be replaced with 3-4 green chilies)
Oil - 2 tbsp
Cooked rice - 3 cups
Spices needed:
Mustard seeds - 1.5 tsp
Cumin seeds - 1 tsp
Cloves - 3
Bay leaves - 2
Ground coriander or coriander powder - 2 tsp
Ground cumin or cumin powder - 1 tsp
Procedure:
1. In a pre heated pan, add spinach and fry it for 2 mins. Let it come to room temperature and blend it into a smooth paste.
2. Add oil to a pre heated pan, add the dry spices (bayleaves, cloves, mustard, cumin) to it and quickly roast them.
3. Now add chopped onions and fry until they are translucent.
4. Then add chopped carrots and fry for a minute. It's time to add salt, ginger, garlic and peppers.
Quick fry them until the raw smell is gone.
5. Close the lid and cook it for 2 mins.
6. Add the ground spices (coriander and cumin) and mix them for 10 seconds.
7. Saute the blended spinach puree for a minute.
8. Now add cilantro and rice to it and gently mix everything.
9. Cook on a low flame for 2 mins with the lid closed.
Notes:
1. Spices burn very quickly. Do not fry dry spices or ground spices for a long time (time should be between 5-10 seconds).
2. Flame should be on medium low or low when frying the spices or mixing the rice.
3. This dish can be made with only cilantro (Coriander rice) or only spinach (Spinach rice).
4. Instead of adding cilantro separately, you can grind it along with spinach puree.
