Welcome back to It's Cooking Good. We are making Spinach & Ricotta stuffed pasta shells (Conchiglioni). This is a great one pot dish that comes together really quickly. The pasta shells are stuffed and then submerged in a garlic & basil tomato sauce and then topped with mozzarella & parmesan and baked in the oven, creating this deliciously, cheesy pasta dish masterpiece! This is great for a family meal, serve with a side salad and some garlic bread if you wish. Suitable for Vegetarians and definitely suitable for anyone who likes a hearty pasta meal bursting with flavour.
Ingredients:
Conchiglioni Pasta Shells - Enough for how many you are catering for - we work on 4-5 per person
500G - Ricotta Cheese
1/2 Cup - Grated Parmesan
500G - Spinach (Wilted)
250G - Grated Mozzarella
1 - Jar Passata
4 - Garlic Cloves Crushed
1TBSP - Dried Oregano
1TBSP - Tomato Puree
Zest of 1 Lemon
Pinch Sugar
1 - Egg
2 - Sprigs Fresh Basil
1/4 TSP - Grated Nutmeg
