Best sponge cake ever! My family and co-workers are not fans of sweets but they gobble this up! Took several tries to get it right but I'm glad I did. Bundt pan never worked well for me so I use regular cake pan, lightly grease it, put in parchment paper and grease it again. Works every time! Also, the cake goes great with caramelized pineapple and whipped cream! The only sponge cake recipe I ever need! Thank you so much for sharing this wonderful recipe, Trang!

Just made this recipe! I did not have milk so I substituted water. It was sooooo good! I have tried various sponge cake recipes and yours is the best! The cake is sponge texture and the taste is great not too eggy! Thank you so much for sharing ☺

I love this recipe ! It was so fluffy and soft with a good amount of sweetness. I alter this recipe a bit by adding banana so it becomes a banana sponge cake :D I made this cake two times in one week and it turned out beautifully both times. i used one banana and mashed it with a fork :D i also recommend reducing the milk to a little less than 1/4 cup so it will be still fluffy and not TOO TOO moist :D

Và theo lời khuyên của chị, em cho 1/4 cup coca powder để làm chocolate sponge cake, sau đó dùng cốt bánh này làm Black Forsest Cake. em cũng làm cả Swiss roll nữa. Brown sugar is quite a bit heavier and if you use it the sponge cake won't be as fluffy and light. I recommend you stick with the white sugar. For cupcakes, bake for 18-22 minutes. Check for doneness using a toothpick after 18 minutes as oven temperatures vary. Good luck!

Cake flour is lighter and has less protein than regular/all-purpose flour. You can make your own cake flour using all-purpose flour and corn starch. Good Luck!

Hi Junny, the timing of when to add the cream of tartar is after the egg whites are frothy, after 1 minute of being beaten. I would not add it before. Soft peaks barely hold their shape. The peaks flop over immediately when the beaters are lifted. For this recipe, the egg whites should be whipped to the Stiff peaks stage-turn the whisk upside down, and the peaks hold. They should point straight up without collapsing at all. Hope that helps.

Hi Sophia, you can make your own cake flour as follows (this is for 1 cup): measure 1 cup of all-purpose flour and then remove 2 Tbsp. Add 2 Tbsp cornstarch (in UK it's called corn flour). Sift together several times and you now cake flour. All-purpose flour will be fine too but the cake will be a bit denser. Hope that helps.

Thanks for the recipe! I wanna try to make it for this Christmas, but I wonder if I can use just white regular granulated sugar instead of baker's sugar. Are they different? I failed a lot of times to make sponge cake with different recipes. But I noticed that your recipe is different from others! So I really want to try!

Hi, granulated sugar is just fine but if you have a coffee grinder or food processor you can quickly turn granulated sugar into baker's sugar. I hope this recipe works out for you! Good luck!

Definitely, use the same amount of orange juice. 1/4 cup pure lemon juice might be too tart so perhaps you can mix it with another liquid.

Hi Phuc, With how you describe your stand mixer, I am concerned you may not be able to whip the egg whites to stiff peaks. If you like this cake, may I suggest another recipe? RunAwayRice I believe you can get a stiff peak even with a hand whisk. It takes a very long time, and a lot of patience and elbow grease. But I have done it successfully and made a good sponge cake.

I don't recommend substituting all-purpose flour for the cake flour in this recipe. It won't give the cake the light and airy texture.

The bundt pan is pretty but any cake pan will work just fine and the cake will be fluffy. You can also make cupcakes. What kind of pan did you end up using?

hi thank you for sharing this recipe its so easy to understand,😃 i have a question, if i adding milk and oil dry ingredients it will 1/4 of dry ingredients? for exsample 150 g of flour 75 g of sugar and thr amount of wet ing. is 35 ml of oil and 35 ml of milk? with at least 150 ml of eggs or 5 eggs?

What is cake flour is it all purpose flour ? Self raising flour? Thanks

Cake flour has less protein than all-purpose flour (and therefore lighter) and does not contain salt and baking powder like self-rising flour. Some common American brands are SwansDown and Softasilk. Hope that helps!

Hi...I tried this ur recipe and it turned out delicious...thz 4 ur sharing...I am making a bigger one and I did increased double ur recipe but I wonder the temperature I have to increase it or keep the time for baking to 1hr?...Plz advise...thanks alots!!!

Hi, that's wonderful that you enjoyed the recipe. The timing for a double recipe depends on the size of your pan. If it's much thicker/higher, then we need to increase the baking time. If the pan is just wider, the baking time will be about the same. So follow the original recipe and bake for about 30 minutes. Then every 5-7 minutes, test using a toothpick until it comes out clean. Enjoy all the delicious cake!! :)

Hi Jessica, what is the size of the heart pan? If it's a larger pan yielding a thinner cake,you would need to reduce the baking time as the cake would bake faster.

Hola! At this time I made Sponge Cake, let's see how it is, I did all the measurements. One question, if I do not have cream of tartar, and I can replace it? with sodium bicarbonate? Cornstarch and salt? ;)

Hi Isabel, you can substitute the cream of tartar with 1 tsp of lemon juice or vinegar. A pinch of salt would work too but not sodium bicarbonate (baking soda) or cornstarch. Good Luck!

For the egg white mixture I don't have a stand mixer but will a hand mixer give the same results?

Hi Judy, you don't need a stand mixer for the egg whites. A hand mixer will work, it just takes a bit longer and you'll have to use High speed to whip the eggs. Good Luck!

Faduma Fatima Hi, you can substitute the cream of tartar with the same amount of lemon juice, 1/2 tsp. I would not recommend using self-rising flour. The proportions of flour to baking powder isn't right and self-rising flour also has salt in it. I recommend that you use the cake flour to achieve the spongy texture. Good Luck!

+Anh Hoang-Le Hi Anh, try beating the egg whites a little less. Sometimes overbeating eggs causes a cake to deflate when the air leaves. Also how long did you bake it?
