180°C/356℉ 15-18 minutes
[How to Make]
① First, make the Earl Grey sponge cake base. Sift the cake flour and separate 4 eggs.
② Add a small amount of sugar to the egg yolks and beat until lighter in color and thickened. Whip the egg whites, first beating to create bubbles, then gradually add sugar and whip to soft peaks.
③ Fold some of the whipped whites into the yolk mixture, then sift in the flour and tea leaves. Gently fold until no dry streaks remain, then fold in the remaining whipped whites.
④ Heat the milk and butter, then fold into the batter until well combined. Pour into the prepared pan and bake. Allow to cool completely.
⑤ Prepare some sliced fruits for assembling. In a bowl, whip the cream with condensed milk and sugar until stiff peaks form.
⑥ Trim 2cm off the sponge at an angle. Spread whipped cream over the sponge and arrange fruit slices. Roll up tightly and chill. Dust with confectioner's sugar before serving.
