Hello. Thanks fr the recipe. My brinjal dishes never come out as "back home" ones😢. Hope to try the 2 recipes for brinjals on your videos..keeping my fingers crossed 🤞 . Just a question..can I fry the brinjals etc. days ahead? Will help save time enormously!

Hi, thank you for contacting me regarding questions about the brinjal recipes. I have not fried the brinjals a few days earlier, I'm not sure how the texture and taste will change after a few days. but a day earlier or frying them in the morning for a dinner in the night should be fine. You can refrigerate it in an air tight container after gently patting them to absorb any excess oil. I would also reccomend reading the recipe post on my website for these recipes as they include tips as well. hope this helps, let me know how it goes. best regards J

It's early spring here in Australia and i've just sewn my eggplant seeds. Definitely adding this to my list to make later in the season when the glut arrives. Delicious!!

Hi! Apologies for the late reply. thank you for contacting me, hope you have an abundant harvest of eggplants. unfortunately, I don't do well in gardening but my husband and mother in law are. they love their chillies, especially scotch bonnets. Hope you can try this recipe, I can eat the eggplant moju with just a bowl of steaming white rice and dhal curry. a simple and humble vegetarian meal. please do let me know how it goes. regards, J

Hello again. Thanks for the tips. I just went on yr Web page..saw that the "moju" can be made ahead and stored in the fridge..ouf! I'll start with that! It's just that my hubby (French) loves the brinjal recipes and I just don't get it right😢 We r in the South of France 🇫🇷 in a small seaside town, so even getting spices is difficult! Now that I'm writing this long post..My sis from Australia sent me the blackish powder for Pork curry??..do you have a recipe for Pork Curry too? Sorry fr all the questions🙏 this is from a Sri Lankan dying to eat home food!😊

Hi, thank you for the response. regarding the brinjals, please let me know what goes wrong so I can help you find them. sometimes when you over-fry the brinjal strips the dish turns bitter. I can't imagine a seaside town in France would be anything but beautiful. lucky you despite not having access to spices. regarding the pork curry,, as I am a Muslim, I cannot cook any pork dishes but I believe you can cook it just like the Jaffna curry powder chicken curry on my recipe site or the chicken curry on this channel. the only caution I will give you is to use the dark curry powder as too much can turn the gravy slightly bitter. Start with 1 teaspoon, taste and as needed but 1 to 2 teaspoons should be more than adequate. hope this helps. Please don't hesitate to ask me your questions, I will reply to them but it might take a few days. regards J

Hello again. Thanks for the tips. I saw from them on your website that the moju can be kept for a week or so in the fridge and the pahi can be frozen....so am hoping to do so! Thanks a lot for the recipes🙏 Will let u know the results🤞. I think the "black curry powder stuff" I have on hand is not good anymore😢. So will try your "kalu-pol" one to try out the other curry. Can I make the kalu pol spice mix beforehand to save time? Sorry for asking so many questions😉 Hope my Sri Lankan food turns out well finally. Thanks once again for all your help..appreciate it very much.
