Hello Guys, nice job in the coldroom ! Sausage is looking nice, pro tip ! hold the skin between you indexfinger and thumb. with a little pressure on the nozzle. than you have more control and it works faster. And for portioning the sausage press with 2 fingers in the sausage with 2 hands(so left and right together at the desired distance. and swing the sausage 2 times and continue untill the end. ( you dont need to tye a knot in the skins. And before preparing . soak the sausage in warm water for 5 minutes. then the skins won't burst. greetings from Sandra( Sandy)😂 and Raymond ( more sausage tips available ) And use Ken with a dough hook or K wisk to make youre sausage dough. Hands is nice but your warming up the meat warm meat is nice , But not for this sausage 🤣🤣 😁

E bom trabalho.
