Always have a second vendor back up. I used to work in the hotel. Sometimes I have to drive myself and go buy. It always have a back up plan.

I really enjoy watching your videos. Very educational and honest. For those interested in starting a wood-fired pizza business I highly recommend getting Rolling in the dough from Fire-within. I personally have this book and it's by far the best source of information out there. It's not cheap to purchase but it will save you from huge mistakes. I also attended the Fire-within university in Denver and that was amazing working with professionals. Please keep the videos coming.

You don't have to cut treesdown. Use down limbs and penning branches etc. I can take 1 3 in round in the oven have exact smoke taste. Wake up and Smell the coffee Jack.

Love your videos. I ordered my trailer and wood-fired oven a couple of weeks ago. Been thinking about it for a while but your videos have inspired me. Keep them up. Now to figure out my dough recipes and how to use the oven. Going to the pizza expo in August to see what I can learn there. Thanks

Cremosa brand and Hormel bold slice. Those are the best available to me. Would love to try more brands. I like the bold slice the best.

Hey man, thanks for sharing. ?, your oven looks like it’s a barrel style not a dome. I’ve heard that a barrel oven can have cold spots in it. Do you find that to be so?

Hey man, thinking of starting my own pizza truck! Would you be able to send the dimensions of the truck you have or make a video tour of your truck? I want to use an airstream but I just want to be sure the oven and all the gear will fit. Also (if you don't mind me asking) how much do you charge per pizza and how many pizzas do you usually sell per week?

Inside back of truck is right at 16ft long just over 7 wide. I have a video/ a look back on my build. Check it out. Make sure your axles are rated for the weight. I charge 7.50 to 14 depending on pizza and size. Going to bump everything up a buck soon just to keep up with rising cost. Thanks for watching!

Yes wax paper. Individual sheets 1000 to a box. Runs about 12 bucks a box

To be honest I have no idea. A bunch of good ovens out there. No mater what you go with you will learn and become familiar with that particular oven. I know some companies are having a hard time completing orders at the moment.

I know you went with the 120 size, what exterior model and finish did you end up going with? How tall is your steel frame that the oven is sitting on, two or three feet? There is so many options, and I know some are designed differently. I am thinking about doing a trailer, do you believe puting the oven out on a porch with a pass through, would be better than keeping it enclosed inside the trailer?

@@SCraig1966 I didn't choose a finish, I ended up doing the aluminum diamond plate myself. They didn't have different openings and things like that to choose from when I bought mine. I'll have to get back to you on measurements. I do like the ovens that sit outside the trailer. It looks cool and any advantages you can take advantage of to keep the trailer cooler I'm all for. I'm sure having the oven outside definitely helps in that department.

Thanks Eric. The manufacturer your oven now has tons of different options you can add. From shape, size, archway, finishes, height, and fuel. I guess if you're going to showcase your oven on a porch, it might be good to have a little bedazzle on it. Other than that, it's just the tool to cook your pizzas. I do wonder how high yours is set, and if you like the height. I know crouching down and looking in the oven, would get old after a while. But the only two options on the steel frame are either 2ft or 3ft. Love watching your videos man keep it up!

@@SCraig1966 I would say 4 ft. It's just the floor is just below my chest. It's definitely not 2. I noticed all the options last time I looked. Your correct it is a tool. All the extras look nice but cost more money. You have to find the balance when building a truck or trailer because it adds up quickly. You want it to look good but not cost you a fortune and be functional.

Is carbon minoxide not a problem with a gas powered oven in the truck? I’m wanting gas powered but not sure about the carbon monoxide. Are the outdoor ovens ok if they are vented through the roof?

At events a hour plus, I have. By myself during the week 45 mins on a busy night. It's not fun but it happens. Whoever is taking orders just needs to be upfront with the wait time. Just make good pizza, they will wait.
