Hi Jen, I buy ginger fresh in a large blemish free bunch, and freeze it whole in a freezer bag. I trim the side I an going to use and scrape the skin off around that side then micro-plane ( grate) it frozen, only using what I will need for that dish and return it to the freezer for next time. It lasts for months frozen and tastes fresh, so long as I remember to trim the open end before i use it. Hope this helps. Love your channel =) Karen

Haven’t even watched it yet but so excited for it! We had a turkey in the deep freezer and it fed us for 8 days. I butchered it and cooked it 4 different ways to use in different recipes. Planning to do the same next week with a huge brisket I have in the deep freezer. This quarantine is scaring the shit out of me-I’m in Chicago and high risk. Between my toddler and being in the kitchen I’ve been keeping my mind and body busy. So far I’ve made 3 loaves of bread, flour tortillas, corn tortillas, tamales, tons of muffins, and three batches of beans. Looking forward to the recipes in your video!

Love this! So many recipes call for 20+ ingredients and sometimes I never use some of them again. And that is just for 1 meal! This is so much more budget friendly and so much easier to use since I already have almost all of the ingredients. Thank you for making life easier☺️

Hey Jen. I love your videos. We are in Minnesota so have similar going on here with the Covid 19. I’m a grandma to 5, a nurse that just retired in February, after 42 years! We always did Sunday dinners for all so are really missing seeing everyone. I was so impressed that you were thinking of your in-laws. My daughter-in-law is the same. Has been so incredible with leaving both treats and sweet messages from the grandkids on our step for us to find as we are socially distancing. Thanks for doing this!

Just a tip. Cook the chorizo up first, add the egg and then mix all together. That's how you cook it traditionally. 🙂 Also cook the tortilla on a pan first just toast a little on each side then wrap. Companies don't cook the tortilla 100% so you can heat them up and get them all nice and yummy. It'll make a difference I promise! ❤️

Jen, love your prep videos. Your dinner idea's are wonderful. I noticed that you have a butcher block counter top. How do you care for it? Do you have to put that oil on it for butcher blocks? Every day or not at all? Just curious, we would love to have a butcher block top, but unsure how they hold up and how time consuming they are for care. Thanks.

Hi Jan...I'm new to your channel and have enjoyed binge watching your videos. To borrow I will make the chicken fried rice recipe and your granola recipe. They look delicious and quick and simple to make without a whole lot of bells and whistles that I would not have on hand. Doing g meal preps is a great idea that is a new concept to me. We do more leftovers here. I'm curious to prep veggies for during g the week how can I prep like peppers, onions, celery, carrots etc. without them spoilling? Do I freeze them after I chop them or how do I best store them and how long will they last? Also, are there any veggies you wouldn't do ahead of time? Thanking g you in advance and thanking you for your great work and the tips you add.
