@@vpaul4374 Stretch and fold allows more air to get trapped in the bun, cooking it uniformly. Just rolling it makes a lump of dough that has a hard time cooking through fully.

One of the reasons you should roll it out and then pinch the edges to form a ball, rather than rolling it is so you get air pockets in the center. Proofing for an hour, rather than 15 minutes would also have made more air pockets.

Okay but you cant skip proofing, and i could tell by looking at your dough that it hadnt been kneeded enough, i know 10 minutes without a stand mixer is a pain but it cant be skipped. Also theres a reason that the dough isnt just rolled into a ball, the extra stretching at the end adds more elasticity to the final product 😅 skipping this compounds the first issue of not being kneeded enough (which is also probably why it was just barely cooked all the way, density effects the bake)

The moment I saw the dough I immediately thought it's going to look like hard rocks lol. I usually knead until it's smooth and still leave it to rest for at least 30 mins before forming it to whatever shape I like. Then leave it to rise for at least an hour. I'm no professional, but I sell out almost everyday 😂

Your dough was dense because the folding method makes it so that there's more air left in the bun, just rolling it into a ball in your hand will result in a denser doughier bread as air is pushed out and dough is compacted

The folding has a purpose. It thins the dough and lets steam travel through it for a more even cook, but just making a ball prevents that and needs a more time to cook through.

Like others have said, proofing is key as well as stretching and folding. Also, check to see if your yeast is active. Heat the milk up slightly and mix the yeast in, wait for a bit to see if it bubbles. If it does, you have active yeast!

The pinching part is actually super important! If you just roll it into a ball, the steam doesn’t go through the bun properly, hence big dough ball instead.

This makes me think of a German recipe called "Dampfnudeln" it's basically the same but you cook them with a bit of sugar, butter, and water in a closed top, the steam cooks the dough and the butter and sugar makes caramelizes the bottom. Serve with vanilla sauce.

@@Mientuw We also have the neutral one in Germany. They are the common ones. "Dampfnudeln" are a preparation variant in, i think, south Germany, of the neutral "Hefeklöße". For myself, i know the neutral variant (Hefeklöße) with hot blueberry sauce or hot pears.

You used bad yeast which Is a hyper realistic bummer in a home kitchen... Yeast goes bad very quick and by that I mean it will not fully proof your dough making it incredibly dense try this again with a brand new pack of yeast if that doesn't help it means your fast tracking the proof period wayyy to much

he proofed 1/4 the required time and clearly half-assed the kneading, if you don't work the gluten enough it's quite apparent by the lack of smoothness. Not necessarily on the yeast, he half-assed it 5x more than you ever should when doing something as comparatively finicky as baking

Very similar to Steamed sourdough dumplings that are popular as a side for sauces in central Europe. Make a starter first, from warm water or milk a bit of sugar, salt, flour and the yeast. Then add the flour to the starter and knead. Let the dough rise in a warm place, and then divide and shape the balls/ oblong pieces. Let those rest and then steam for 8 minutes. They'll come out much better.

well that's hardly a passable result. Being creative when cooking is good and all, but baking is more strict than throwing together a spice mix because, you know, you're relying on specific enzymatic or chemical reactions to occur at specific times in specific ways to get the results you want. Of course there's rules of thumb, but you have to know a lot to mess with a baking recipe and not get garbage out if your change is more than "it said 500g of flour but I accidentally used 520g, oh well"

Ok my suggestion would be: kneading makes a huge difference. Definitely stretch and fold, that helps with gluten development. And proofing makes it so much airier. Considering the amount of yeast you used I suggest you proof for way longer. Also, this is optional but use a filling 😂
