I have found inverting sugar is much preferable to yeast as well as going for a lower PABV (1.060). The mash ferments out much faster and without issues. I started trying to ferment high PABV and struggled often with the yeast. Since lowering the SG....no problems! I haven't stepped my sugar but may try in the future.

I just finished an experiment with clearing wash. Normally I have always cleared my wash but lately put some cloudy wash in the still without any particulates to prevent scorching. The cloudy wash tasted alright but smelled like dirty feet! I am back to believing a clear wash is well worth it. My $0.02.

I don't know about anyone else, but I aim for 1.060 to 1.065 as a target, max being 1.070, especially for whiskeys.

Hmm, just ran a single malt wash last week. Cloudy as f. Used an electric element, came out beautiful. After the run I took out the heating element and it was pretty clean. Could it have something to do with element size? Amount of power/ 120 vs 220 volt? I'm in Europe running 60ltr on 2500 Wats at 220v
