A few questions, because I very much wish to try this at home I'm amazed that this chicken could be soft enough to eat after only a few minutes of cooking. I find that hard chicken needs more time to soften. Is the "hard chicken" the same as the mature chickens/spent hens/laying hens they sell in Chinese stores? And do you think I can substitute sweet potato instead of carrots? I ask because I'm trying to avoid too much Vitamin A

Lol you probably missed when I mentioned the times in the video, but the chicken cooked for about 50 minutes. I don’t think sweet potatoes is a good substitute for carrots cause they have different textures/sweetness. You can leave the carrots out then cook the sweet potatoes separately cause if you cook it with the chicken everything will be sweet and it will taste like sweet potatoes porridge with chicken. Or you can just use fried ripe plantains instead or fried rice! I hope I helped!

@@stephanieasoh Ah, thank you! I did not miss that, but I supposed I shouldn't have called 50 minutes "a few minutes." I usually have to cook mine for a few hours. Thank you for the advice. I'll try the fried plantains! I love those.

Thank you! Tough chicken is the kind of chicken that we use in Africa. It typically takes longer to cook than American chicken. So we call it tough chicken or fowl. Lol they’re all chicken

an old chicken. we just butchered 20 unwanted roosters that were seven months old for an friend. They should have been butchered at 7 weeks, Those are tough and weighed 12 pounds each! But have to try this on one of them. Pressure cooker is another way..
