In Australia we call this Sticky Date pudding and it wasn't till I moved to Scotland that I realised it was also Sticky Toffee Pudding. Now I'm back home and it’s turned out to be handy because it's my mum’s favourite dessert but my Dad isn't a fan of dates. So i just call it Sticky Toffee pudding and he loves it 🤣. I will have to give this recipe a try, but I might skip the Marmite. I’m guessing Vegemite might not work in its place? Yay for finding your favourite flavour.

Wow!! Just made the sticky toffee sauce in preparation for a cupcake baking session tomorrow. I had SERIOUS doubts about the Marmite ( definitely not my favourite🤪). Hey loves ! As far as i know , in europe we tend to say corn flour for corn starch ,but the normal corn flour that comes from corn is yellow and not a fine powder as corn starch is white and fine powder . Corn starch is a consetrated form of starch from corn which we use it as a thickenning ingredient , corn flour is a normal flour that you can use as the rest of the flours for baking ech ech. (sorry for my English ,not so good :D) Happy Spring ! Thank u for all your wonderfull videos ! Whenever i tried one of your recipes comes always soooo good ! (

Ooh, I love custard! I also love Marmite, but think I'd leave it out of the toffee sauce :D Btw, I don't cut a hole in cupcakes when filling with sauce or lemon cheesecake icing - I just insert the nozzle straight into the top of the cake. It kind of swells up a little, but it retains its integrity and gives a lovely surprise when you bite into it :)

Hey, I'm not sure if it's been addressed before, but I have issues with your recipes that call double cream. I live in Turkey and only heavy cream and kaymak (a type of clotted cream) are commercially available. Cream with +%60 fat content is reserved for commercial use only. From what I've gathered, double cream is not that common in the U.S. or anywhere outside of Britain for that matter. Would you consider adapting your recipes to account for the lack of availability, perhaps giving us a potential substitute?

Creme mousseline advice and help needed! My creme mousseline was going fine but just won't thicken enough to piping consistency. After the bit where it stops looking curdled and starts to look like it's going well I was using my KitchenAid on top speed for maybe 20 mins but wouldn't stand up and just had the consistency of softly whipped cream. I even put a splash of double cream at the end in in the hope it would whip up and help hold its shape. I can only think I made a mistake when it came to the measurement of the cornflour in the custard stage. It thickened ok like a thick custard but maybe it needed to be super duper thick? Anyway, it's no good for my cupcakes so I've hidden it away in the freezer to stop me from crying over it. It tastes delicious but any ideas what I can do with it now instead of using it to top cakes?
@hengwin

I'm German, but I've never seen anyone make German buttercream like you do (beating the butter into the custard). We usually whip the butter until white and fluffy, then add the custard in big spoonfuls, and this way around it absolutely can split if the butter is too cold. I will try your way next time!
