豆角豆腐乾炒蜆肉
材料:
急凍煮蜆肉200克
豆角10兩
榨菜、木耳適量
豆腐乾1件
辣椒仔2隻
蒜蓉1茶匙
處理:
1. 蜆肉,清水解凍。
2. 豆角,清水洗乾淨,對齊,切去1吋,然後切一吋一段。
3. 豆腐乾,切粒,放碟上。
4. 辣椒仔,洗乾淨,切粒,放同一隻碟上。
5. 蜆肉已解凍,擎乾水,放碗內,加入少許粗鹽乸2分鐘,清水沖洗乾淨,擎乾水,廚紙索乾。
6. 蜆肉調味:
a. 胡椒粉適量
b. 生粉適量
撈勻。
烹調:
1. 大火在鑊內燒熱油100毫升。
2. 爆香蒜蓉及豆腐乾,推向鑊邊。
3. 加入蜆肉,炒香,推向鑊邊,加入豆角,炒2分鐘。
4. 豆角已炒至軟身,加入榨菜及木耳,炒勻。
5. 加入糖半茶匙,炒勻。
6. 加入少許生粉芡,炒勻。
7. 完成,上碟,灑上辣椒碎。
8. 可享用。

Ingredients:
Frozen boiled clam meat 200g
Green string bean 10 taels
Sliced mustard tuber, black fungus appropriate amount
Dried soy bean curd 1 No.
Chili 1 No.
Garlic sauce 1 tsp
Preparation:
1. Clams, defrost in tap water.
2. The beans, rinse with tap water. Get it aligned, cut off 1". Then cut in 1" per length.
3. The bean curd, dice in cubes. Put on plate.
4. The chili, get it rinsed. Dice in cubes. Put on the plate.
5. Clams have been defrosted, drain. Put in a bowl. Season with little cooking salt for 2 minutes. Rinse with tap water. Drain. Dry with kitchen towels.
6. Season the clams:
a. Pepper appropriate amount
b. Tapioca starch appropriate amount
Mix well.
Steps:
1. Heat up 100ml of oil at high flame in wok.
2. Fry the garlics and bean curd well. Push them to the edge of wok.
3. Add in clams, fry well. Push it to the edge of wok. Add in string beans, fry for 2 minutes.
4. String bean has been softly fried, add in mustard tuber and black fungus. Fry well.
5. Add in 0.5 tsp of sugar, fry well.
6. Add in little tapioca sauce, fry well.
7. Complete. Put on plate. Put chili cubes on top.
8. Serve.
