I always wondered what I was doing wrong when the bottom of the jar cracks!! This really demonstrates the adage: “Knowledge is power!” Also, genius idea to use canning lids as a buffer for the bottom! This was such an interesting and useful episode!! I’m such a huge fan!!!

Excellent information! One common way of causing a temperature (and pressure) differential in canning is the premature release of pressure. I had a roommate in college that wasn't the brightest bulb and he would always take the pressure regulator off at the end of the canning cycle and let the steam escape loudly. He would always grin and say "I know, but I'm impatient". I think that may be a more common practice than people admit, though it isn't safe for the food being canned or for the jars.

I have those Atlas jars too! It was very exciting to see them. I got them at a thrift store years ago and it took me a while to realize they are only 30 ounces (at least the ones I have). I couldn't figure out why I was getting more than 7 jars for a 7 quart recipe. hahaha. Anyway, I've been enjoying your channel and subscribed about a week ago.

Thanks. The one I used in the video is 20 ounces and originally came with spaghetti sauce in it. That is why I bought that brand of sauce. I have them in 20, 24, and 30 oz. Sadly, they don't use those jars anymore, so I quit buying their sauce!

Does anyone know where I can find an Instapot type device but with a much larger 22qt or bigger interior capacity? I have the same 22qt Presto pressure pot shown in this video and it takes about 3hrs for full 15psi@90min heat/cool cycle. And I have to be present to make sure everything works smoothly. It would be amazing if I could simply click some buttons that say 15psi@90min and walk away knowing the pot would automatically raise heat at the most optimal rate. If the whole process was automated I could even purchase 2 or 3 units and finish all my canning even faster!

I’ve got tomatoes ready to be harvested from the garden so I will be canning them. This will be my first attempt at canning. I am so grateful that you take the time to extend your teaching skills and knowledge to the online community. I am watching and rewatching because I very much value the “why” behind this process, whether it be water bath or pressure canning. Joanne’s has silicone spatulas that I absolutely love, one of them is a long straight spatula that, I think, is the perfect tool for de-bubbling jars. In fact, I think it’s also less expensive than that plastic stick they’re trying to sell us on…especially with a coupon.

Wow! I thought about going to the end of the video to see you break the jar. Boy, am I glad I watched it all. Actually, I was doing a lot of things wrong. I tighten as hard as I can, I put my jars in the canner right on the bottom AND I've filled to the brim! I'm so surprised that I've never broken any jars. I sure learned a lot today. Thank you.

I put my hot jar from the canner to the oven and leave them overnight there no problems that way I do use those cooling racks in the oven that you have in the video and put the jars on them in the oven

What a excellent video. Even though i have been canning for a really really long time, i always learn something new from your channel. Like you, i don't need to buy a measuring device for headspace or a tool to debubble. A chopstick, for me....works just fine. (must be the scottish part of me). Your explanation was clear and thank you. Close to 50 years ago, I would have jars break and it was from thermal shock. It was all my fault. I followed what my Mother-in-law told me to do and it was wrong. I learned then what I was doing wrong and change and no longer have a problem. Surprising how reading your canner booklet directions can help.

Thank you for all the wonderful information. Last year I had some breakage problems. I was wondering if storing them in a garage with temperature fluctuations could have weakened the jars? Also, I bought many of them at yard sales. Is there an age limit to the jars?

I used to make my moms pickles, and it didn't say add hot brine. After the bottoms of the jars broke off several times while making these, and I lost everything in the jar along with the mess, I finally figured out it should be hot brine.

If they are Mason jars, then yes. I have some Atlas jars that spaghetti sauce came in and they are mason jars as well so I have used them for canning.

I just recently found your channel and I so enjoy watching the videos you and Jim put together! What a wealth of good, solid information/instructions! When I have fewer jars than I have food (proteins) to can, I use bouillon, onion and garlic, fill the jars with hot water and pressure cook those. They always turn out beautifully and I have a flavor base for cooking!

That is a brilliant idea!!! I’m a newer canner and have been putting jars with water (no seal) to fill in spaces. I didn’t want to can sealed water. I can always use chicken stock and keep bullion on the shelf! I guess I would just need to make sure it’s a pressure canning recipe not water bath canning. Thank you for sharing!!!😊

I came here tonight..HAPPY NEW YEAR! because I had my FIRST jar break. It was as you demonstrated, a "thermal shock break. Two pieces that fit perfectly together once I got the pieces. I even took pics as I was curious as to the "Why" behind it? It was a qt. of turkey stock. The others were fine. As far as I could tell, I removed the jars, two @ a time, from the oven & then filled with hot stock just strained out of the slo cooker. So hot jar, perhaps even hotter liquid. The canner's water was hot as well. The only thing I could think may've contributed 2 the breakage was maybe I waited too long to fill the jar & it had "perhaps" cooled a bit yet the stock was still very hot. (There was a short interruption). While awaiting the pressure build up, I heard the "crack" & KNEW a jar had cracked. Since I had 2 jars just filled with water 2 balance out the load, I hoped it was one of them but, alas, it was my lovely stock. Do you or anyone else reading this think the short cooling off of the jar then the added hot liquid then to the hot canner was the problem? Thanx!

I just watched your har of mock chicken break out the bottom. Love it because in the past 2 days, 3 of my jars have done just that. Everything was at the same room temp so I still can't understand. Am I squeezing the lids too tight? I'm using an Instant Pot Max and have done so for 3 years. This is the first time I've lost so many jars at one time. Any hints? Thank you and God bless!

Unbelievable Rose! You've filled gaps in places I didn't even know I had places, (and makes sense now I know you taught statistics). Of course, you're familiar with the saying, "what you know, what you don't know and what you don't even know that you don't know", how am I supposed to ask a question about something I know nothing about? all while being a teensy bit terrified thanks to rumors of botulism etc? I've been watching and listening so carefully, replaying again and again trying so hard to learn because I'll be damned if I'll be the cause of me and my loved ones getting sick! I really appreciated this presentation. From watching this video I figured out what I’ve been doing wrong: I was immersing the full jars into full-boiling water. My new plan is to only “pre-heat” the water bath to very warm/up to hot, but not boiling, and then bring up to boil before starting the timer. I’ve just now done a couple dozen quarts using this strategy and it’s worked well so far.

Lost almost an entire WATER BATH canner load to Thermal shock . That was Decades ago. Never repeated that again. Did you know that water-bath canners have different bottoms depending on the heat source ? Flat bottom for electric and rippled bottom for gas or other open flame (wood). Just a fun factoid.

Dr. Cantrell I just watched a youtube video, How To Reuse Jars in Canning by JamesSaubrey1965 (2 yrs ago). I thought it was very interesting and I wondered what you thought about repurposing jars that you buy at the store that have foods like spaghetti sauce in them and using them in your canning? Back in the 80's they use to sell Dry Roasted Peanuts in glass jars and the regular mouth lids would fit them. I canned a lot of my tomato juice in them in a water bath but never used them in a pressure canner.

Excellent video! Can I leave my filled jars with fruit in the water until it cools down to remove them and place them on tea towels. I had 2 jars in hot water bubbling away. Then realized I may need another jar so I placed it in the hot water and sure enough it cracked bottom only.

Thank you once again. You are my go source for all things homestead. Question about canning 3 quart jars in a large canner. You specify to fill an extra jar with water as a placeholder so the jars don’t become buoyant and hit into each other. In a 16 quart canner which holds 7 quart jars, wouldn’t you want to add 3 extra placeholder jars so that all jars are snug?

Oh…it happens! I had my first thermal shock bread last month. Yep…I packed sausage in the jar, and one was still a bit frozen, crusty and bendable. I thought by the time I fill the rest, and the water warms, then heats, it will be fine. Oh man…I pulled the jars out and that one blew the bottom off! I learned my lesson.

Very good information. I have recently purchased jars from a well known manufacturer that experienced stress fractures like example 2 with the lightening like cracks and hairline fractures just from being washed in the dishwasher. If they can't withstand the dishwasher when new, they certainly won't make it through the pressure canning cycles. Needless to say I will be returning those for a refund. When only a one or two companies control the entire market quality tends to suffer.

Boy did I learn a lesson with temperature differential once upon a time. I was baking something (must have been meat) in a Pyrex casserole dish and decided to add some water for moisture which I had done many times before in a metal pan. Well…I was in a hurry and without thinking, I added cold water from the fridge pitcher and almost instantly the dish basically exploded in my oven. What a mess!! It scared the life out of me and thank goodness I wasn’t hit by any of the glass, but I learned to be very careful with glass cookware from that point on!

Be careful when washing jars by hand too, a diamond ring can score the inside. And, I like to use a chopstick to de-bubble. Make of wood so no scoring.

I can verify that over tightening of the band will break the jar. I had one break on me so far. Soup, what a mess. I use the free chop sticks you get to remove air bubbles. Thanks for the great information. Happy Homesteading

I just started canning and the first 2 came out beautiful but my 3rd try one jar cracked my temperature was off I so appreciate your information and how you explain is great for me to understand thank you so much...

I was hoping you would cover cleaning, sterilization and how to keep jars hot and ready to fill with hot brine. Also what to do with lids. I am about to try my first canning if pickled beets and then bread and butter pickles and have yet to find a video that covers these steps.

What about reusing mayonnaise jars for canning? I have done it for years without losing very many from breakage but what do you think?

How to prevent temperature differential though? I tried pressure cooking some room temperature liquid and it cracked…I used the rack too

So far ive been very aware of those causes and have avoided a sad loss - I found it so hard to watch the sacrificial jar educate us all - 😟 #RIP Jar. 🧡 from Victoria Australia Always learning sharing.

that thermal shock pattern can also be caused by impact stress... if you keep putting silverware into your canning jars to soak so you can wash them. the repeated stress of a butter knife or etc being dropped into a caning jar (even when full of water) will do it. if it doesnt break in the sink it will break the next time you can with it sadly learned form experience

Lol, I use a a chopstick as a debubbler, because everytime I go eat chinese , I keep the chopsticks for a multitude of uses.

Thanks for sharing. I'm new at canning. I wanted to know why one of my jars broke on the bottom. Now I know the cause was a "temperature beak".

Never thought of having an extra jar with water as a space holder. Excellent suggestion.
