I was taught to add salt in the beginning to encourage water to be released. My grandmother dried the mushrooms and salt in a very hot dry pan. In a separate heated sauce pan she added EVOO rosemary, smashed but whole garlic cloves, salt flakes and white pepper brown the garlic then add unsalted butter so it melts but, doesn't burn. She then removes rosemary and garlic and pours this sauce over the mushrooms. She served this to a guest our uncle brought one dinner. He turned out to be a chef and was so impressed he said he would put this on the menu. He invited us for dinner and introduced my grandmother to the patrons as the creator of the Champignon Madame Maria they applauded she was very overwhelmed and grateful. She was an amazing lady. Ms. Maria's Mushrooms are my favorite food.

Hey i legit did this the other day by mistake 😂 i forgot to add butter at the start and the pan started smoking then the water came out. After it dried i added butter and they were lovely 😋

@@themodernnonna For less cooking time, you can also put them on a paper towel, sprinkle generously with salt, let sit for bout 15 min or more and pat all the water that comes out with more paper towel. It was a fun experiment I read about and really works well! I was very surprised how much water the salt drew out 😮😊

Am mushroom lover, too. Happy to share my quick mushroom in garlic dish: cut heads, mince mushroom stems, sweat minced (lots of) garlic in olive oil, toss in mushroom heads and stems +- 2-3 minutes (just cooked enough), a tbsp of white wine. Top with chopped parley, serve with a good slice of bread, also to wipe off sauce with😋.

I make them exactly this way. Mushrooms are like a sponge so if you add oil in the beginning the mushrooms will soak it up, so dry saute until cooked and add the oil at the end to finish them.

When all that water comes out I pour a lot of it away, it's too much and too long to wait. Only butter and black pepper is the way to go.

@@jks3190no problem! I think you should do it both ways at the same time and taste the difference. The ones in the dry pan will have a firm, but succulent, meat-like texture w a nice crisp on the outside and golden color. The quick cooked ones will be rubbery or overcooked.

Just as important: use a large pan and don't put too many mushrooms in it. You still need to see plenty of the bottom just like in the video. En let it get frickin hot before you add the mushrooms.

Salt at the start to release more moisture, once the butter is melted blast on medium high heat to seal off the mushrooms and sear them properly instead of boiling them in the butter like this.

I’ve always loved mushrooms. 🍄 Mostly because of my nan, I don’t know how she cooked them (she died 12 years ago) but I’ve never tasted mushrooms as nice as the way she cooked them. 😞 Since becoming vegetarian 18 years ago, I eat mushrooms most days. I hate saying ‘meat alternative’ as I won’t eat anything that looks or tastes like meat (quorn, seitan etc.) but I guess they replace it in a way. They really go with anything.
