My mom makes something similar to the second one. She knows what you made, but her method is get a bunch of chopped strawberries, put them into a tub of alcohol, let that sit for a month in a freezer, add sugar, let it sit for a week, then bottle. It's actually really good. I would imagine it's similar to Negori, though it is not meant to be mixed with anything else, because it will be too much alcohol.

Some corner cutting to make the Strawberry Bandito; which I feel you were close to doing at the Chemist part of the vid. - This is legit my favorite cocktail, which I make it all the time :) Skip infusing the tequila with jalapeño and cut a couple rings of fresh jalapeño when you shake the cocktail. When you make the Strawberry puree, boil the mash and add a small amount of sugar to taste, then strain (I use frozen strawberries from Costco). What you're left with is a clear strawberry simple, of which you can omit the simple when making the Bandito.

Hey Nick, one thing I really reccomend is making a strawberry moscato syrup. Just replace the water in a strawberry simple syrup with moscato (I literally use alcohol free Moscato so I can use it for mocktails) and you may need to add some lime juice to get the sourness right. It’s really delightful. I like making a really straightforward drink with it. Just 2:1 with Dry Gin and Strawberry Moscato Syrup then 0.5:1 of Lime, and 3:1 of Soda, garnish with a whole strawberry and a lime wheel if you want it to be fancy. Served in a Highball over big ice cubes, super good for warm weather.

A good way to infuse fruits into a spirit is to pour the blended fruit into a whip cream canister and then adding the spirit and the fruit and then pressurising the canister and refrigerating the same as in the video this forces the spirits further into the fruit and pulls as much juice out as possible when the pressure is released and the spirit is strained out. You can also then use the remaining pulp as an ingredient in a boozy tart or make an alcoholic syrup to use as a garnish so you dont waste anything.
