Directions:
Preheat Oven to 350 degrees.
Butter 9' x 9" pan and set aside.
Use mixer to fully combine 6 TBS softened butter and 3/4 cup granulated sugar.
In a separate bowl wisk together 1 cup flour, 1/2 tsp baking powder, 1/2 tsp baking soda and 1/2 tsp salt.
Mix in 1 egg, 1/2 cup Greek yogurt and 1 tsp vanilla extract to butter mixture.
Add flour mixture and continue to mix until completely combined.
Pour batter into pan and spread evenly.
Crumble Topping: Stir together 1/2 cup flour with 1/4 cup melted butter, 1/4 cup of sugar, 2 TBS brown sugar and 1 tsp cinnamon. I use a fork. I find it easier.
Slice 2 cups of strawberries you can use fresh or frozen. Once slices pat dry.
Place strawberries on top of batter.
Spread Crumble on top of strawberries.
Bake for 35-40 minutes at 350 degrees. Check for doneness at 35 minutes.
Allow your Strawberry Coffee Cake to completely cool.
Prepare your glaze while you wait.
Glaze: Combine 1/2 cup powdered sugar with 1 -2 TBS milk. Add a little at a time to reach the consistency you like.
Once your Strawberry Coffee Cake is completely cool drizzle on your glaze.
