Strawberry jam.
- Strawberries - 1kg;
- Sugar - 1 kg;
- Vanillin - 1/3 teaspoon (optional)
- Lemon juice - 1-2 teaspoons
We clean the strawberries from greens, wash them, cover them with sugar and leave until the next day so that the strawberries release juice. The next day, we separate the strawberries from the syrup and cook only the syrup for 3 minutes after boiling.
Then pour the hot syrup over the strawberries and leave until the next day or until completely cooled.
The second and third times we do everything in the same way, that is, we must boil the syrup three times for 3 minutes.
For the fourth time (the last time) we cook the syrup with strawberries together. About 30 minutes. add vanillin sugar 1 teaspoon (I did not add) and squeeze out the juice from the lemon (or citric acid) so that the jam does not sugar.
We check the readiness of the jam, while the jam is hot, it is liquid.
Pour a little jam onto a clean and dry plate and put it in the cold. When the jam in the bowl has completely cooled down, run your finger through the jam. If the jam does not fill the remaining trace immediately, then it is ready.
Pour the finished jam into clean (sterilized) dry jars and roll up.
Store jam in a cool dark place.
