Strawberry Rhubarb Crisp
Set the oven to 350 degrees.
In a 2 quart baking dish combine:
3 cups of rhubarb
5 cups of fresh strawberries cut into bite size pieces.
¾ cup sugar
1 ½ tsps. Orange zest
Juice of one orange mixed with 2 TBSPS of corn starch and 1 tsp vanilla
For the topping:
Cut ¾ cup of cold butter in to:
1 cup flour
1 cup of rolled oats
½ cup brown sugar
½ cup white sugar
½ tsp salt
Lightly pack the topping on to the top of the fruit in the baking dish. Try to leave an open area between the edge of the dish so there is room for the berries to bubble up.
Bake in a 350 degree oven for about an hour or until the berries bubble up and the topping starts to brown.
