These Stuffed Mushrooms are perfect as an appetizer or snack. Salty, earthy, and almost as cheesy as my jokes!

Stuffed Mushrooms:
12 Stuffing mushrooms, cleaned & stems minced & reserved
¼ cup finely diced shallots
2 tablespoons finely minced garlic
1 slice bacon, chopped small
¼ teaspoon red pepper flake (optional and/or to taste)
1 cup seasoned breadcrumbs
1 8oz package cream cheese, softened to room temperature
¼ cup beef broth
¼ cup grated Pecorino Romano cheese
Salt & pepper to taste
3 slices provolone cheese, cut into quarters
1. Preheat oven to 400 Degrees F
2. In a large frying pan, over medium-high heat, cook bacon until crispy
3. Once desired crispness has been reached, add shallots and mushroom stems, cook until soft and fragrant
4. If desired, add red pepper flakes
5. Add garlic and cook, stirring constantly, until garlic has begun to soften
6. Lower heat to medium low. Mix in softened cream cheese until thoroughly combined. Should resemble a very crumbly dough
7. Remove stuffing mix from pan into a heat resistant bowl and allow to cool during next step.
8. Place mushroom caps, stem side down, on a foil lined sheet pan that has been sprayed with oil.
9. Bake mushroom caps in 400 degree F oven for 10 minutes.
10. Once the caps are done, remove from the pan, shaking out any excess liquid from the inside of the caps.
11. Discard used foil and apply new foil, sprayed with oil.
12. Combine Pecorino Romano cheese into stuffing mix, adding beef broth a tablespoon at a time until just barely moistened. Should have a dough like consistency.
13. Season stuffing mix with salt & pepper to taste.
14. Using a disher or large spoon, stuff the mushroom caps, using your hands to pack the stuffing in.
15. Once all caps have been stuffed, top each one with a quarter slice of provolone
16. Bake at 400 degrees F for 15 minutes, until cheese has begun to brown slightly.
17. Allow to cool for a few minutes before stuffing them in your face hole!
