All that automation with the sorting, and orientating the olives, and pitting 900 per minute... and some poor bastard at the end has to stuff them by hand? They have the tech to orientate and punch a hole in an olive, but not cram a chuck of garlic into it at the same time? Then they fill the jars by hand? WAT? Look, I've watched a lot of these How It's Made videos and even worked in a factory myself, but these tasks that these workers have could be and probably will be replaced by a machine before too long. If your job could easily be replaced by a machine, you probably shouldn't count on having job security. "Hi, Honey! How was your day at the olive factory?" "I quit after 4 hours and spent the rest of the day in the bar wondering what I'm doing with my life."

Olives are bitter and mildly poisonous raw. You don't cook them, you soak them in lye for a couple days to leach out the toxins, then several salt water baths for another week or two to get rid of the lye. And bam, olive deliciousness!
They are very very bitter, you cant even contain them in your mouth. I tried once from my grandparents olive tree. Its a day i still regret

Chechen Wolf You can buy cracked olives with the pits still inside, but the olives have been brined with garlic, celery, carrots, and other vegetables for an authentic Italian experience. That's how we make ours.
