This looks delicious! I’m going to try making this but I want to substitute the beef with a non-meat alternative. I know there are plenty of soy options but I’m wondering if you have any suggestions for a more natural and healthy meat alternative. I want to cut out soy and processed foods as much as possible. I was thinking shredded carrots? Or chopped mushrooms?

@@ellengrace4609 I’ve used mushrooms from a food processor as a meat substitute in sloppy joes and besides the color being off, my family didn’t even notice. I tried it again in a blender and it was too mushed up so I definitely recommend a food processor for the mushrooms so the texture/taste is like ground meat. Mushrooms also have a umami flavor that typically accompanies protein packed foods so they really are a great substitute. I have the cheap little Cuisinart food processor and it works great.

@@ellengrace4609 When it worked well I used one 8 oz carton of whole brown mushrooms and one 8 oz carton of sliced mushrooms. The size and cut of the initial mushroom didn’t seem to matter. The food processor diced them both up the same. Maybe it’s something to do with the blade. When they didn’t work out I was using three 8 oz cartons of whole brown mushrooms in a Ninja blender. I used the lowest speed and it just pulverized them way too much and they lost their “meat” texture.

I made this tonight for my wife. She told me to add it to my rotation, and she's a picky eater. Great recipe! I used a thick slice of prosciutto to my oil, vegetable stock (I was out of beef), added mushrooms and red wine, sherry vinegar, red wine vinegar, and balsamic and used arborio rice that I toasted in olive oil before boiling. Froze some and made some lunches for work.

Wow! This soup recipe is a keeper!! Made it this evening after traveling home from a weekend in VT; easy, and delicious. I doubled the green and red peppers, added parsley; used veg stock as I was out of beef. Its always fun to try one of your recipes, Lisa!

Well, the husband loved it! Said I should add it to the rotation. Quite earnestly, I add. I used a bag of frozen tri-colored peppers (chopped up) because that’s what I had on hand, and it worked well.

This was such a hit I had to make a second pot! We used ground elk instead of beef, and I added some grated zucchini (only because I have so much of it). I roasted my own tomatoes and made my own tomato sauce, so every veggie in the recipe came from my own garden. I had been planning on making stuffed peppers, but I'd rather have the soup, so thank you for the great, timely recipe.

Here's a tip for you, when I get bulk gr. turkey(or beef) I freeze some already cooked. I also make extra rice and freeze it for fried rice. I have a big bag of frozen onions and peppers too. I bet I could have this soup made in 10 minutes if I defrosted the meat in the microwave.

my wife makes stuffed peppers, we freeze them to pull out for a quick meal, add some peas and carrots with some beef broth, chop up the stuffed pepper, and its done in a couple minutes!

This is nearly my deconstructed cabbage roll in a bowl recipe! So may I suggest if you want to change it up the next day, take some cabbage and pan sear it until it gets some color. Sprinkle with a sweetener caramelize further. And then add this magical stuffed pepper soup concoction to experience yet another taste.

Your stuffed peppers are on my meal rotation and it’s one of our favorites! Everyone gets so excited.. so this is the perfect soup for the cooler weather ahead!.. Our favorite soup is Caldo Tlalpeno.. it’s a Mexican soup (we live in South Texas) but I’m thinking this one will make it to the top of our favs

I have made this 3 times (with ground turkey) and LOVE it. Currently down with covid and happen to have made a huge pot of this soup just before that. Worked out perfect for me. I will be eating this for a couple of days while I am in isolation :)

I made this soup yesterday but as I didn't have any beef to put in it I just put a couple of handfuls of macaroni in it instead. I wanted some more of it today, so fried some lardons until golden and crispy and threw them in too, and the result was really good. I am imagining that it would be great with some fried chorizo as well, but next time I make it I will try with the beef as per the recipe. Thank for a lovely, easy, and very customisable recipe 😋

This is like an Italian style "chili". The recipe is the same as my chili, which has black and red beans, with chili powder, but no rice. I mean, even the same thickness. I save nothing, just put the pot in the fridge, bring it out and microwave it in a Pyrex bowl...yum. Just may give it a try. (You even cut and use the peppers the way I do.)

Just made this today & it is fantastic. One thing I did a bit different is that I turned it into a crop pot recipe & add uncooked rice 30 mins before serving. I did have to double the beef broth but man it sure came out good.

I make a version of this, as well as a ''stuffed cabbage soup'', almost the same ingredients just add cabbage and less bell pepper. My favorite Soups are: New England Clam Chowder and Scotch Broth. I also love Mushroom, Miso and Hot and sour soup.

So, I made this exactly as instructed. I wanted to freeze some for later, but the hubby wouldn't let me. He wanted it for dinner the next night again and for lunches. I guess I'm making more in a few weeks and freezing right away so I have some in the freezer for a fast meal. Yummy, just like everything else I've made from your sight. Ok, I finally made this soup tonight and it came out delish. I pretty much followed your recipe. The only thing that was just ok was the crushed fire roasted tomatoes. They were a little too sweet for me. Next time I'll do regular crushed tomatoes instead but other than that it was very good. Thank you.

Absolutely make double batch freeze half for winter when you come in from the cold pop it in the microwave and have hot comfort soup . I have spaghetti sauce for 2 and vegetable soup Chile in freezer , took very large ham for Christmas, ground 2 pounds froze for ham salad sandwiches ,to night made omelets with the ham frozen onion and peppers ,took 2 pounds cubed for later froze hambone for bean soup later.

I've been making this soup for years! One of 2 favorites! Creamy potato and carrot is mynother favorite. Potato and leek is my 3rd favorite. Tip roast the peppers in the oven for even more flavor and the soup cooks quicker. I also add a bit of brown sugar

You can use the garlic peels to make into a tea, it's very beneficial for circulation. Place the peels in cup, cover with hot water and let it sit for about 10 mins, strain and drink.

I'm retired but used to work for the federal government. Our facility had a cafeteria that made stuffed green pepper soup. They always had leftovers so we'd have the soup a few days in a row. This soup is even better if it sits a day or so. Just like beef vegetable soup. This has me now geared up to making a pot soon!

I made this soup following the directions with one exception. I added 1 - 1/2 Tsp Worcestershire sauce. Excellent recipe. Next time I'll just use 3 gr. bell peppers for an added kick. Sooo good. Much easier than making stuffed peppers.

You might try using Paprika as a spice. I think it would give you that "fire roast flavor"! I've been cooking since I was a kid. Nobody ever says "NO" to a dinner at my place!! Hope this is helpful!! 😊

😢I make this by the canner full , then I put into sterilized qt jars, i water bath for three hours , take out place on towel let cool seal then it goes on the shelf, when ready take two jars dump into glass cake pan top with mozzarella cheese put in oven 350 til cheese is a golden brown, take out let cool a bit serve or help yourself.

I will have to try this soup. I frequently make a dish using these ingredients, but in different proportions, resulting in what you might call Spanish rice with ground meat. I like to use green, orange, and yellow bell pepper, celery, and I also use half ground beef, half ground pork. Just enough stock to cook the rice and only half a can of tomatoes. Great served with some salsa on top. Perhaps this would be similar to what Louisianans know as jambalaya.

Just tried this today and what a nice, easy and delicious recipe! I did substitute the ground beef with soy mince as I'm a vegetarian and also instead of white rice I used brown. But this recipe will surely stay on my list for frequent use in the future!

Well, i have some stuffing left over from my stuft peppers. Will try after we buy 2 more bell peppers. I never add onions to my recipes because they say they attract bacteria. I love them in everything. Should i be concerned? Or just add them anyway?

I made this exactly as instructed. I thought I would like the thickness, I didn't. I am going to try it again with some more broth for a little more soupy consistency. Oh wait, I added a pinch of cayenne. I will also add a little more of this in my next version. It is a wonderful base and I will continue tweaking. Thank you!

You could leave out the rice to the pot. Just add rice to the bowl then put the soup on top when serving. Rice and pastas soak up the liquid. I am going to try this tomorrow….looks good…

This recipe elicited an endless stream of nom nom noms from my husband! I used a bag of frozen tri-color peppers, and it worked perfectly (they chop easily if you let them thaw on the counter for just a few minutes). I had extra leftover brown rice, so I added extra broth to compensate. More soup for me!

I came up with a version of this recipe myself about 30 years ago. I liked stuffed peppers, but I realized while eating them that I was cutting them up to chow down on them after they were cooked. I am admittedly a lazy cook sometimes, so I thought making the stuffed peppers as a soup would be easier. Some browned hamburger, chopped peppers, chopped onions, diced tomatoes or salsa, cheese, rice, and seasonings and voila! Stuffed pepper soup. Writing this has given me a new idea: stuffed pepper casserole. Make the soup, but make it thicker. Pour it into a casserole dish, cover it with cheese, and bake until it's bubbly and the cheese is melty and browned a bit.

I’m making this right now with extra meat in it. It already tastes fantastic and it’s so easy! I made a loaf of bread to go with it. Can’t wait!

Thanks! I'm going to make this for the weekend! For now though, I'm making a coconut curry chicken pumpkin soup since I've already got my heart set on it and the chicken and broth is finished already. I'm looking forward to trying this recipe!

I made this last night and it was delicious. I am diabetic, so I swapped out the rice for cauliflower rice and it was great (although I would have loved regular rice better, lol) Thank you.
