You just reminded me how much I’ve always enjoyed stuffed peppers. I absolutely do prefer roasted red, orange and yellow ones to the green, and will be making this recipe soon. I never thought of slicing them vertically, but they do seem easier to stuff and they do sit nicely on a baking dish and then on a dinner plate. I say tomato just as you do, likely because my mother pronounced that way. My mother came from very fortunate circumstances and was educated in top tier private schools (in America). Her grammar and pronunciation are impeccable, as are her manners ( she would never complain about, nor correct anyones speech).

When I make stuffed peppers I bake them covered, and with a nice tomato sauce that is actually meant for stuffed cabbage rolls, which I also love. I agree about the pepper colors.

I just looked up my recipe for stuffed peppers from a cookbook in the 70s. Sure enough, they were for GREEN peppers. But Kevin, that’s all we had in those days, at least up here in Toronto, Canada. Maybe that’s all your mum had too. They were probably boiled first because green peppers are a bit bitter. Mine were stuffed with onion, parsley, soft bread crumbs, cheese, salt, canned tomatoes, and topped by butter. They were delicious, but I bet they will be better tonight made with RED peppers😂

Green peppers are the unripe peppers. When ripe, they turn red, yellow, or orange depending on the variety. Sometimes they spoil as they ripen, so maybe that is why green peppers are used so often. Green peppers are so cheaper also, but I prefer the ripe ones.

Either your mum used the same cookbook your mum did or we're siblings separated at birth, because my mother used to make terrible stuffed peppers -- mushy green things she'd boiled the life out of BEFORE baking, filled with ground beef & rice & tomato catsup. It took me 30 years to try them again after I left home! I do mine as you do, no blanching. I most often do my version of Moroccan, with lamb, slivered almonds & raisins (as Jennifer N describes) & have been experimenting with grains: quinoa, freekeh, millet, tef. We probably have them once a month, with a spinach, carrot, mandarin & pomegranate salad. Delish!

Like you, I like precooking my meat and rice for stuffed peppers. I occasionally make stuffed peppers as you did with the addition of raisins, almonds or pine nuts, and Moroccan spices. I really enjoy the sweet and spicy flavor of many Moroccan dishes. Ground lamb is a good option with this combination, but obviously not necessary. I agree with you on the green peppers. The ripe peppers are most appealing and delicious.

I think they look so pretty with the stem on! You know, I've pre-made the filling, cooking it in a muffin tin. Then I remove the "muffins" from the tin and freeze them. Then when I make stuffed peppers, I pop a couple of the "muffins" into a fresh, cleaned pepper (depending on the size of the pepper). Then I just bake them with cheese on top. Really fast.

I love stuffed peppers so when I freeze them since I live alone I use a freezer bag and put one in each bag and get the air out. And freeze. Sometime I will put the cheese on them and freeze with the filled peppers. Works out great. I fill mine with ground Chuck, sautéed onion with mushrooms, black sliced olives and cheddar cheese with some mozz cheese. then follow your recipe.

A tip.... I find the quickest /easiest way to remove the white pith (which is bitter) from the inside of peppers is to use a small melon baller and gently scrape. The round Mellon baller moves along the contours, unlike a paring knife would. Just a thought. Also did you know peppers have as much (or more) vitamin C as an orange? Nicely done, as always, Kevin! PS - I do a variety of colours and my green peppers turn out beautifully green. I think they often overcooked everything way back when, to an almost mushy soft -especially vegetables. Love that your recipes leave so many open options. You give us confidence to know it will turn out delicious. Lentil beans are so healthy - never considered them in peppers. Cant wait to try. Hi Kevin. I cook my peppers in a deep sided frying pan on top of the stove. I cook them in a sauce made of sauteed onions, stewed tomatoes and a few tablespoons of brown sugar and lemon juice. This makes a delicious sweet and sour sauce. I use the same method for stuffed cabbage. Thanks for all of your wonderful videos.

Looks good! Before stuffing try rubbing the peppers with some olive oil. Then also add a drizzle on top before the cheese.

I do like the idea of cutting the peppers through the stem. It makes the dish very appealing. And love using ground chicken, that will be what I will do the next time. I like adding wild rice to the mix ( pre-cooked of course) and a big yes to the colorful peppers.

I cut my peppers the same as yours. My filling is cooked ground beef, cooked quinoas (instead of rice) mixed with medium salsa then topped with more salsa then baked. I will definitely try yours! 😋

Green Peppers give me indigestion ! Cold Stuffed Peppers make excellent sandwiches ... Green onions and parsley give a nice flavor also .. I will use uncooked rice but I 1st boil it for 5 minutes. Try making a "Chilli Rellano"

Many of us have food “things” from our childhoods. Mine would be lumpy oatmeal, that certainly filled me up, but which was like swallowing paste. Even sugar and milk didn’t help. To this day I can’t stand even the smell of oatmeal. Oatmeal/raisin cookies is the only way I can stomach oats.

There is a cafeteria chain in my area of Georgia called S & S Cafeteria that has been in business for as long as I can remember and I am 68 years old. There are two locations in Macon, Ga and one location in Augusta, Ga. Their food is delicious. They make the best stuffed peppers…I can close my eyes and taste them right now!!! They are very traditional peppers stuffed with ground beef and rice cooked with a delicious creole sauce poured over them. YUMMMMMMY!!! Yours look delicious, too!!! I like to take raw peppers and stuff them with either chicken or tuna salad or even shrimp or seafood salad. They make a great snack or picnic lunch. 💝😁

Good morning from Germany.... Your stuffed-pepper-recepie transported me right back into my childhood..my father used to.make them....and we children loved them... he allways used the red ones.. You are right about the green ones.. .colour-changing-wise. I also find they have a slight metallic-taste....and the sweetness of red/orange/yellow bell peppers matches the filling very well. The cheese is new to me-but since yours look delicious,I will follow your advice and add it. I also like,when you let little incidents in the video. like here,when you dropped the one fork-bite and reacted sooo cool and charming... that shows your proffessionalism and quick witt and lifts it to another level. We not onky watch you cooking-but it is a show...with all sorts of pleassnt extras. And your personality touches the audience.. I’m picking up what you’re putting down on the green pepper thing. Like them fresh but not so much cooked, basically the reason stuffed baked peppers hasn’t been on my menu. Kevin, I am having a banner pepper crop, but do they all eventually change color, no matter what the variety??? I would prefer orange or red, BUT DON'T WANT THEM TO ROT ON THE VIiNE! This is my first attempt. I, too, had no interest in eating them as a child! My husband is accustomed to additional sauce on top of the peppers, so I will probably cater to his wishes! You asked for other filling for peppers. I have used the ingredients for lentil kebabs or parties. These are equal quantities of soaked red lentils, grated cabbage, grated potato, onion and grated carrot, some ground almonds, seasoned with sea salt and black pepper, garam masala, cumin and cayenne pepper (just a little pinch). Ideally, the spices should be lightly toasted in a frying pan in a v. little oil. If this is a bit of a faff, an equivalent amount of mild or medium curry powder will be fine. Four cloves of garlic are prescribed but powder or paste is OK too. As there is no egg to bind the mixture, I don't recommend any substitute for the onion. A certain amount of moisture is required because you don't precook the lentils, only soak preferably over night. Again for quickness, you could easily blitz all the veggies in your food processor. In any case, squeeze out some of the excess fluid. The only cheese suitable to put on the top would be paneer (don't know if that is likely to be available in the US) or sliced halloumi. As you probably know, currey has become almost as much a signature dish as fish and chips and roast beef and Yorkshire pudding in the UK. The last two are now far too expensive for ordinary families in the dire economic situation here, brought about by Brexit, Covid, the war in Ukraine and governmental ineptitude, which has resulted in a creeping attempts to gradually deprive us of our civil rights. So sorry to rant but I'm so old as to have witnessed politicians who actually had a grasp on their brief as well as a certain amount of moral rectitude. I try not to fall into the error of suggesting that all politicians are in government for unworthy reasons or ambition and I certainly don't want to add to the widespread polarising. Of opinion in the public debate. Heaven forbid! So please just ignore the last paragraph as inappropriate for this good humoured site - I have just been a bit under the weather for the last few days.

Potato, potahto, tomato, tomahto. These look delicious! I usually make with beef and add chopped mushrooms and sometimes black beans and corn to make more Mexican style. I would also make with turkey or chicken. I wonder If you could make a Thanksgiving style with turkey, stuffing bread or wild rice, cranberries, celery, gravy? Just use orange and yellow peppers for fun. Maybe for a leftover meal. It seems like everyone likes stuffed peppers. Fun to use the red , yellow, and orange peppers as well. My mom also made stuffed peppers using the green one's. Somehow she cooked them so they looked okay, but the taste was always bitter. To this day I won't buy or eat green peppers. I'd rather spend $1.50 a piece for red, yellow or orange than $0.25 for the green. BTW? If you get yourself a 'birds beak' paring knife, you'll wonder why you waited.

Oh yum! Your stuffed peppers look delicious! I generally make mine with beef and cook the beef with a few veggies like tomatoes, garlic and celery (sometimes even some fine chopped carrots), as well as adding herbs and spices to the mix. Like yours, it's never the same twice. I can't eat onions, although hubby loves them, so I add sauteed onions to his after I've taken mine out of the pan and stuffed my peppers. One thing I like about peppers is they are different colours, so I can make mine in one colour and his in another. That way I don't get his onions by mistake.

We always had the stuffed par-boiled green peppers as well, And because that’s what we grew in the gardenI didn’t like them, and I convinced my mother to put some of the stuffing aside and bake it in a small dish, and I ate that instead. These days, I make stuffed peppers with rice, black beans, leftover cooked corn, chopped onion and garlic and a can of Ro-Tel (drained). For seasonings, I use Mexican oregano, cumin, coriander, and some chipotle pepper. Yours look yummy.

Hello Kevin, this recipe reminded me of one I used to make, thought you might like to add it to your repertoire. Ingredients 5 peppers, any color but green. 1 lb crispy cooked bacon, crumbled One large onion finely diced One large tomato finely diced One cup of mayonnaise One sleeve of saltine crackers, finally crushed Clean peppers, & cut in half Mix all ingredients together, then fill each half with mixture and cut each half into three. No need to cook, these are so delicious as an appetizer, and always receive raves. I really hope you will give them a try.

I misspoke. The recipe with butter beans is for stuffed tomatoes. Pass the beans through a wire sieve, mix with bread crumbs, cheese and seasoning, bind with an egg, and fill tomatoes with mixture. Bake in a hot oven until slightly brown, taking great care that the skins do not break. May be served hot on toast, or used cold as a salad, with a good dressing on top. (You cut the tomatoes in half and scoop out the center.)

As you said our Mother's recipe was awful, that said I do use green peppers, but fresh from the garden and I do not blanch or cook them. Maybe because they are fresh from the garden they are wonderful. I do put onions in.

I learned something watching you cut through the stems!! They do look elegant that way. Green pepper is an acquired taste for me., as a child I hated the taste of them in “spanish rice”. I never ate a stuffed pepper until I worked in a hospital kitchen, the old fashioned country cooks made them with bacon and rice.I stuff my green pepper: I make a meat-loaf mixture with ketchup, tomato sauce,, mustard, worchershire, garlic , salt, pepper onion an egg and a quantity sufficient of cooked whte rice, I top each over- stuffed pepper with a spoon of salsa or hot taco sauce.and bake in a covered pan with about a half inch of water..when done I top with cheddar cheese and let it bake a few more nins. We eat them with more rice and spoon the cooking juice over all . Recently I found a recipe on a bag of fresh peppers:.prepare ground beef with a packet of Old El paso taco mix, add a can of refried beans and some rice,, pour salsa over and bake.

Why are people so incensed about how you pronounce something, especially since they obviously know and understand what you said? One of my Aunts was from England and I spent a lot of time with her when I was young. I also picked up a lot of her pronunciations. My best response to "pronunciation Nazis" is my Southern resting bitch-face. I'm sure you have an appropriate Northern version. Those peppers look amazing! The way you do them, even the green peppers would retain their color, and I really like the idea of using chicken. It would also be yummy with ground venison. I can a lot of chicken and other meats, and that would make a really nice, fairly quick, meal. Thank you for the great idea!

Believe it or not, I was born and raised in upstate South Carolina, and I have never had stuffed bell peppers. It just wasn’t something my mama prepared. But, watching your recipe I have decided that it’s something I want to try. I prefer yellow, orange, or red peppers ~ maybe it’s just me, but I think they have a better, more delicate flavor than the green ones. Anyhow, I live alone and I’m going to be trying these. And don’t worry about people who find fault with your saying to~mah~to. They obviously have nothing better to do than criticize others to make themselves feel better about themselves. I say to~may~to because it ‘s the way I was raised, but what difference does it make? My children don't like green peppers because they say they're bitter. It's red, yellow & orange for us. I make my own tomato sauce, light and on the sweet side. Everything is raw, beef, rice & onion + tom.paste & water to allow rice to cook. Some reg. seasinings & tobasco too. Bake in big roaster in the oven. Same for cabbage rolls. All my faves. These peppers look delicious. I often add a touch of BBQ sauce to the mix and add some water in the bottom when cooking covered. The last 15 minutes uncovered let's the water evaporate. Steamed a little makes the peppers softer which is better for me with my dental issues. I so enjoy your videos. I love the elegance of your home and your gentlemanly ways.

Hi Kevin, I use my mother’s recipe for stuffed peppers because Ive never found any variation that comes close to it and I honestly think it’s “the bomb”. However, I really love your way of cutting the peppers so I will try that later this week when I make them; because not only is filling from the top a bit trickier, but sometimes getting the peppers to stand upright can also be a bit annoying. The cheese topping is also very interesting and I may give that a try as well. My mom used an 8oz can of Delmonte sauce with a little bit of Worcestershire and Italian seasoning mixed in to top the peppers.

Excellent video and lots of good ideas. I'll try it tomorrow. Love by the way your story about your mom's green/ Grey peppers. I'm sure was the coming process what changed the color and to eat colors and appearance is everything. ❤ for your mom.

My cheater recipe involves Trader Joe's Peruvian Style Chimichurri Rice in their freezer isle. I think my midwestern son-in-law would prefer your recipe, I will make it for him.
