Stuffed Vegetables with Rice Flour Dough
Ingredients:
• For stuffed veggies:
- 1/3 cup onion, finely chopped
- 1/2 cup capsicum, diced
- 1/3 cup carrot, grated
- 1/2 cup cabbage, shredded
- 1 cup paneer cubes
- 1 tbsp ginger, garlic, green chili crushed
- Salt, to taste
- 1 pinch black pepper
- 1 tbsp red chili sauce
- 1 tbsp dark soy sauce
- Cooking oil
• For rice flour dough:
- 1/2 bowl rice flour
- 1 pinch salt
- 1 pinch turmeric
- 2 cups water
- 2 potatoes, boiled and mashed
Instructions:
1. In a pot, bring water to a boil over high heat. Add salt and turmeric, then remove from heat. Stir in rice flour until well combined. Mix in mashed potatoes until smooth dough forms.
2. For the veggie filling, heat oil in a pan over high heat. Add crushed ginger, garlic, and green chili. Sauté until fragrant.
3. Add chopped onions and cook until golden brown. Stir in capsicum, carrot, cabbage, and paneer cubes. Season with black pepper, red chili sauce, dark soy sauce, and salt. Cook for a few minutes until the veggies are tender. Remove from heat.
4. Take portions of the rice flour dough and shape into rounds. Place a spoonful of the veggie filling in the center of each round. Fold the dough over the filling and shape into ovals.
5. Heat oil for deep frying. Carefully add the stuffed veggies and fry until golden brown and crispy.
6. Remove from oil and drain excess oil on paper towels. Serve hot and enjoy your delicious stuffed veggies with rice flour dough!
