🟢材料:
瘦肉 200克
芥菜 400克
蒜頭、薑 適量
鹹蛋 2隻
紹興酒 1茶匙
澱粉 1茶匙
糖 ½ 茶匙
鹽、胡椒粉、油、蒸魚豉油 適量
🟢做法:
1️⃣將芥菜洗淨,將芥菜葉和莖分開。瘦肉切片後用少許胡椒粉、適量鹽、 ½茶匙糖、1茶匙紹興酒、1茶匙澱粉和少許油醃製。
2️⃣鹹蛋黃和鹹蛋白分開,用1隻鹹蛋白和2隻鹹蛋黃。
3️⃣下薑炒香芥菜葉,加入大約1公升熱水,下瘦肉,下2隻鹹蛋黃,蓋上煮3分鐘,撈出芥菜葉、瘦肉和鹹蛋黃,加入芥菜莖,蓋上煮6分鐘。
4️⃣芥菜莖煮了6分鐘後撈出上碟備用,加入鹹蛋白和適量鹽調味,加回第一次撈出的芥菜葉、瘦肉和鹹蛋黃,鹹蛋芥菜肉片湯即成。
5️⃣ 芥菜莖淋上爆香的蒜蓉和蒸魚豉油即成蒜蓉芥膽。
🟢Ingredients:
Lean meat - 200g
Chinese mustard greens - 400g
Garlic, ginger - as needed
Salted eggs - 2 pieces
Shaoxing wine - 1 teaspoon
Cornstarch - 1 teaspoon
Sugar - 1/2 teaspoon
Salt, white pepper powder, oil, seafood soy sauce - as needed
🟢Cooking Directions:
1️⃣Wash the Chinese mustard greens and separate the leaves and stems. Cut the lean pork into thin slices and marinate with a pinch of white pepper powder, salt to taste, ½ tsp sugar, 1 tsp Shaoxing wine, 1 tsp cornstarch, and a little oil.
2️⃣Separate the salted duck egg yolks and whites, using 1 salted duck egg white and 2 salted duck egg yolks.
3️⃣Sauté the ginger with the Chinese mustard green leaves, add about 1 liter of hot water, add the marinated pork, 2 salted duck egg yolks, cover and cook for 3 minutes, then remove the Chinese mustard green leaves, lean pork and salted duck egg yolks. Add the Chinese mustard green stems and cover to cook for 6 minutes.
4️⃣After cooking for 6 minutes, remove the Chinese mustard green stems and set them aside on a plate. Add the salted duck egg whites and salt to taste, then add back the Chinese mustard green leaves, lean pork and salted duck egg yolks that were removed earlier. The salted duck egg, Chinese mustard green, and pork soup is ready.
5️⃣Fry the minced garlic and drizzle over the Chinese mustard green stems with the seafood soy sauce to make garlic Chinese mustard green.
