Subcritical Water Extraction is an environmentally friendly extraction method. It involves water at temperature between 100°C and 374°C and pressure high enough for water to be in liquid state.
At 25 °C water is able to extract polar compounds thanks to its high dielectric constant. While increasing temperature, the dielectric constant decreases so that subcritical water is able to extract non-polar compounds.
