Ingredients:
3 PC's shrimps (peeled and deveined)
75 g dori fish (sliced into strips)
2 PC's crab stick
oil for frying
10 g sweet potato (round sliced)
Tempura batter:
1/2 cup flour
2 tbsp. cornstarch
150 ml soda water
1 tsp. salt
1 tsp. pepper
1 egg
Tempura sauce:
1 cup chicken stock
3 tbsp. soy sauce
4 tbsp. mirin sauce
1/4 cup bonito flakes (chopped)
1 tbsp. radish minced
Cooking Procedure:
1. In a bowl, combine flour, cornstarch, egg, black pepper, salt and soda water. Whisk until the consistency of the batter is reached.
2. Heat the sauce pan on medium heat, pour in chicken stock, soy sauce, mirin then simmer for 20 seconds. Add bonito flakes then mix for 10 seconds then turn off the stove. Remove from the sauce pan and use a strainer to separate the sauce.
3. Heat the wok on medium heat and pour in the oil. Dip in the sweet potato, shrimps, crab stick, dori fish in the flour and batter then fry for 3 to 5 minutes or until brown. Remove from wok and place in a plate.
Note: The process of frying is batch by batch.
4. Prepare a plate to arrange mixed tempura.
5. Transfer mixed tempura on a plate with tempura sauce.
6. Serve with tempura sauce and enjoy.
