pre heat oven to 150C/300F . cook the pig 1,5-3 hours (if you have 200 pounder 4h).or/and until the internal temp reaches to 65c/150f.
take out the aluminium protection .and rise the temp to 200C/400F
until you have the desired crunchiness on the skin (flick on the skin with your finger to check the doneness ,it should sound like a hollow box)
rest for 30 min before serving ....
ingredients
-sea salt (hand full)
-a suckling pig max weight 20 pounds/9kg
-fresh rosemary 2-3 sticks
-bay leaves 4-5 piece
-dried sage 2-3 pinch
-nut oil( 1 cup )
