My blueberry jam recipe is so delicious and sweet despite not having any processed sugar. It's so easy to make and only requires a few ingredients.
Even though medjool dates do have quite some calories, they are still better than processed sugar.
You will want to add this blueberry jam to pretty much everything (wink)
Ingredients:
4 1/2 Cups of frozen Blueberries
6 Medjool Dates (chopped in small pieces)
1 Teaspoon of Vanilla Extract
Pinch of salt
1/2 of the juice of a lime (can be substituted with lemon)
1/2 of the Zest of one lime (can be substituted with lemon)
I did not have lemon at home when I decided to make this, so I did use a lime which is what I had that day.
This is such a sweet treat and guess what? You can enjoy it without feeling guilty. You can add this blueberry jam to your pancakes, crepes, waffles, or simply add a dollop to your vanilla ice cream, yum!
Completely free of processed sugar and chemicals.!
This blueberry jam needs to be cooked on low heat, and requires a bit of patience. It’s about 15-20 minute process, a bit of constantly stirring until it’s perfect. It does require a bit of elbow grease, but it is worth the effort.
After you are done with the jam, place it in a jar and let it cool down completely before placing it in the fridge.
