*Ingredients :-
8-9 Small Size Onion (Chopped)
1 tbsp (Ginger, Garlic, Green Chilli) Paste
Salt to taste
1/2 Small tbsp Turmeric Powder
1/2 tbsp Ajwain
A Pinch Hing / Asafetida
Coriander Leaves
2 tbsp Besan / Gram Flour
1/2 tbsp Red Chilli Powder
Oil

Method:
Begin by cutting the onions in a specific way to achieve perfect kaanda bhajiyas.
Cut the top and bottom of the onions, then divide each onion into two equal halves, keeping the cut side down.
Peel the onions and slice them lengthwise into thin pieces. The slices should neither be too thin nor too thick.
After slicing, separate the layers of onions using your hands. Repeat this process for all the onions and transfer them into a bowl.
Add salt to taste and Kashmiri red chilli powder. Mix well to coat the onions evenly.
Gradually add the gram flour in small batches and mix thoroughly. Then, add a splash of water and gently knead the onions with the gram flour until everything combines into a consistent mixture for kaanda bhajiya.
Heat oil in a pan until it reaches a moderate temperature (around 170°C). Avoid extremely hot oil, as it can result in bhajiyas frying unevenly.
To fry the bhajiyas, dip your hand in cold water and scoop out a small portion of the mixture. Drop it into the hot oil without shaping it into a roundel. Repeat this process for all the bhajiyas.
Fry them over high flame without stirring for the first 30 seconds, then reduce the flame to medium-low. Stir at regular intervals until they turn golden brown and crisp.
Once they achieve the desired color, fry them over high flame for an additional 30 seconds. This step prevents the bhajiyas from absorbing excess oil.
Transfer the fried bhajiyas to a sieve to allow any excess oil to drip off.
Your perfectly fried, crispy kaanda bhajiyas are now ready to enjoy!
