Super Easy Non-Knead Bread
3 cups all purpose flour (can also use bread flour)
1 tsp quick rise yeast
1 tsp salt
1 1/2 cups warm (not hot) water
1 tsp sugar or maple syrup
In large bowl add dry ingredients and mix well.
In another bowl (or large measuring cup) mix water and syrup & stir.
NOTE: if you are using granulated sugar instead of maple syrup, add that to the dry ingredients.
Pour the water mixture into the four mixture and stir with a wooden spoon until all the flour is incorporated and you have a shaggy and fairly wet dough.
Cover with a lid or plate and let sit on your counter for at least 8 hours up to 24 hrs. I made my dough before work this day and baked it that night.
When you’re ready to bake, preheat oven to 400F. Take the lid off your dutch oven and put the base into the oven as it preheats.
Dust your work surface well with four. Flour your hands and sprinkle the top of the dough with flour. pull the dough away from the sides of the bowl and drop the dough onto the floured surface. Sprinkle the top with more flour and fold the dough over itself, a few times, adding flour as needed until you have a nice ball.
Set dough ball on a square of parchment paper big enough for the dough and to come up the sides of the dutch oven. Let this sit until the oven is preheated.
Once the oven is preheated, remove the dutch oven and carefully use the parchment paper to lift the dough into the dutch oven. smooth the folds around the side. Put the lid on top and bake for 30 minutes.
Remove lid and bake another 15 to 30 minutes until it’s as brown as you like. It will depend on your oven and altitude how long that takes.
Remove from oven and lift the loaf out by the edges of the parchment paper. Let cool on a wire rack until completely cool before cutting.
Because this bread has no preservatives it will last about a week. I usually store it in the fridge.
NOTE: if you don’t have a dutch oven (enamel coated cast iron baking pot) you can use a well greased loaf pan.
I didn't cover the loaf pan but you could set a second one on top as a makeshift cover. I'm sure it would work well in a metal pan too.
