What's the alternative we can use for coffee if you don't wish to put it in??

You can skip it and just use cocoa powder. Coffe is only to enhance the chocolate flavour so it can be skipped

One time I tried baking in Hollegen oven, the top park roasted and the middle was uncooked.what could be the problem?

Probably temperature too high. Try a little lower temp for longer time.

Also perhaps the cake was too high in the oven. If so a lower rack might help.

Vinegar only makes the cake fluffy and moist because of it's acidity. You can't taste it in the cake as the amount it too less. It makes the cake only better

All recipes are not the same. Not every recipe uses baking powder. There is a reason for vinegar in this recipe. If you don't want to use it please don't
