Date cake with walnuts is a traditional British sweet bread and a delicious mid-day snack. Lightly sweetened with chunks of walnuts and dates, this cake is perfect with a cup of tea. I have used little sugar in the recipe but you can totally skip sugar. Without sugar it will give you a natural sweetness.
It stays well for a few days and you can have it with coffee, tea, or even a glass for milk. Kids love having this cake as a snack or even as part of breakfast.
You can use different types of dates in this cake recipe including medjool and deglet nour dates.
How long does this cake keep?
Stored in an airtight container, this cake keeps for up to 3 days at room temperature and 5 days in the fridge.
Instruction : Each oven is different therefore start checking the cake after 40 minutes to make sure it doesn't over bake.
Ingredients :
350 gms dates(weighed along with seeds)
75-85 gms chopped walnuts
50 gms sugar (1/4 cup)
2 large eggs
225g all purpose flour (1½ cup)
1 tsp baking powder
1/4 tsp salt
1 tsp Vanilla extract
1 tsp coffee powder(optional)
Butter - 100 gms
Hot milk-150 ml
