Recipe for super quick and easy spoon drop fluffy donuts or donut holes, with milk and yogurt! They are delicious, they don't absorb too much oil and keep well for the next day. Ingredients for a large plate of doughnuts:
• 200 g thick Greek yogurt with 10% fat, room temperature
• 2 eggs, at room temperature
• 300 g milk 1.5% fat, warm
• 400 g all purpose flour
• 10 g baking powder
• 5-6 g of salt
• 40 g of sugar
• 16 g of vanilla sugar (2 sachets)
• 2 teaspoons of lemon extract, or other flavors, to your liking
• Oil for frying
• Optionally, powdered sugar for rolling the donuts in them
In a large bowl, mix the flour, baking powder and salt.
In a smaller bowl, mix warm milk, yogurt, egg, vanilla sugar, lemon extract and sugar.
Yogurt and egg must be at room temperature. This aspect is very important. If the ingredients are cold, the donuts will not be fluffy in the middle. If you forgot to remove the yogurt and eggs from the refrigerator in time, scald the milk, then mix the yogurt in it. You should get a liquid that is warm to the touch, in which you can then put the egg and the other ingredients.
Pour the liquid over the flour, and mix until you get a suitable soft dough. The consistency must be like in the video. Neither very viscous, nor very watery. It can be different for each preparation, even if you follow the recipe, because of the raw materials. When you change the yogurt / flour, the consistency also changes, because each yogurt has a different percentage of whey and each flour absorbs more or less liquid depending on the brand. If the consistency is too viscous, add another spoonful of milk, if it is thinner, add more flour. If you are not sure that it is the right consistency, it is safer to make it thicker than thinner.
In a large bowl, put enough oil so that the donuts float when fried. The oil must not be heated very strongly, you must have an average temperature (170 degrees Celsius).
I dip a spoon in the hot oil, then take some of the dough and pour it into the frying pan. I advise you to take small portions of dough and make small doughnuts.
Fry for at least 3 minutes, as I said medium heat.
Take the donuts out on paper towels, to drain excess oil.
We must wait for it to cool down, then we can enjoy them, rolled in powdered sugar, or dipped in jam or chocolate!
